The aroma changes of stir-fried shredded potatoes (SFSP) were investigated using thermal desorption combined with sensory evaluation and chemometrix analysis. The intensity of the sauce aroma, savory, fatty, and roasty attributes were significantly increased, while the intensity of beany and green attributes were significantly (p < 0.001) inhibited after soy sauce added. Ninety-nine aroma compounds were detected in SFSPs, and aldehydes were the most abundant (relative concentration ratio, 59.18 %-88.80 %). The pH value changes confirmed that soy sauce increased the aroma variances by migration but decreased the total aroma content due to the high oxidation inhibition of unsaturated fatty acids. Eleven aroma compounds contributing to aroma attribute variances were confirmed by partial least squares analysis and aroma-change pattern analysis. Addition test further verified that β-pinene, acetic acid, methanethiol, methional, limonene, 2-acetylpyrrole, ethyl acetate, 1-pentanol, dimethyl trisulfide, dimethyl disulfide, and phenylethanol played a key role in promoting the aroma profiles of SFSP.

Drying is the step that is to be used to adjust and control the formation of flavour and quality in black tea processing. In the present work, the comprehensive two-dimensional gas chromatography with mass spectrometry (GC × GC-MS) and gas chromatography olfactometry with mass (GC-O-MS) were used to determine the dynamic change of the volatile compounds in black tea during drying at 90, 120, 150 °C for 1 h. Results showed that the ratio of esters and aldehydes largely declined when temperature was elevated from 90 °C to 150 °C, while the ratio of heterocycles was increased to 22.

This study aimed to investigate the effect of the combination of shaking and various anaerobic treatments on the aroma quality of gabaron oolong tea (GAOT) by chemical and sensory evaluation. The results showed that elevated anaerobic treatment harmed GAOT aroma, emphasizing undesirable attributes such as earthy, fatty, etc. A total of 85 volatiles were identified by gas chromatography-ion mobility spectrometry (GC-IMS), and the relationship between aroma attributes and volatiles were revealed by PLS regression projection and correlation network.

Broad beans, a seasonal leguminous vegetable renowned for their distinctive flavor and high-quality plant protein, present unique opportunities for culinary and nutritional applications. To better understand the impact of various blanching processes on their characteristics, we employed headspace gas chromatography-ion mobility mass spectrometry (HS-GC-IMS) and biochemical tests to evaluate changes in color, volatile compound content, and levels of antioxidant-related substances following different blanching treatments. Our findings revealed that microwave blanching significantly influenced the a* metric and antioxidant capacity of broad beans.
