The probiotic bacterium subsp. BB-12 (BB-12) was encapsulated in two composites, alginate/agar and alginate/agar/casein. The network structure and physicochemical properties of these composites are influenced by complex interactions, including hydrogen bonding, electrostatic forces between biopolymers, calcium ions, and the encapsulated bacteria. The composites demonstrated a granular surface, with the granules being spatially oriented on the alginate/agar/BB-12 surface and linearly oriented on the alginate/agar/casein/BB-12 surface. They possess a highly organized microparticle structure and exhibit viscoelastic solid-like behavior. The alginate/agar/BB-12 composite showed higher storage modulus, shear stress, and shear strain values, indicating enhanced stability in various physical environments. Both composites displayed good thermal stability, aligning with their rheological properties, confirming their well-ordered structures. Despite differences in composite structures, the release mechanism of bacteria is governed by Fickian diffusion through the composite matrix. Based on physicochemical properties, the alginate/agar/casein composite is recommended for dairy product fermentation, while the alginate/agar composite seems more suitable for oral use. These findings provide new insights into the interactions between bacterial cultures and alginate composite ingredients.

Hydrogels are popular materials for desalination and can significantly reduce the vaporization enthalpy of water; however, there are few reports on hydrogels with a controllable multilevel structural design for water evaporation. Herein, a calcium alginate and traditional Chinese ink-based evaporator (CIE) are proposed and fabricated using directed freezing technology to construct radial channels, followed by freeze-drying and physical cross-linking. Because of the squeezing of ice crystals and the shaping effect of the PDMS template, the prepared evaporator exhibits a sea-urchin-shaped highly geometrical centrosymmetric structure with numerous multilevel pore channels, which promotes the rapid transport of water under different solar incidence angles as the sun rotates as well as overcomes the structural shrinkage of the hydrogel caused by insufficient water supply.

This study aimed to prepare a composite film by blending cross-linked tapioca starch (CLTS) with sodium alginate (SA), silver nanoparticles (AgNPs), and ZnO nanoparticles (ZnOs). The effects of SA, AgNPs, and ZnOs at different concentrations (1-3 wt%) on the mechanical properties, optical properties, thermal stability, and antibacterial activity of cross-linked starch films were also investigated. In this work, microalgae-based zinc oxide nanoparticles loaded with electrospun polyvinyl alcohol (PVA)/sodium alginate (SA) nanofibers were fabricated by electro-spinner. In this work, a new biomass boron adsorbent of N-methyl-D-glucosamine embedded sodium alginate/polyethyleneimine/polysiloxane composite aerogel (SKPN) was reported. Relevant characterization proved that the aerogel exhibited 3D porous structure with plenty of hydroxyl and amino functional groups, which was beneficial to the diffusion of boron and the chelation between boron and SKPN. Various parameters affecting the adsorption performance including pH value, contact time initial concentration, temperature and reusability were investigated.
