The small amplitude oscillatory shear (SAOS) rheological properties of complex coacervate of milk proteins with high (HMC), medium (MMC), and low (LMC) molecular weight chitosan in the optimal ratios of milk proteins to chitosan (15:1, 10:1, and 5:1, respectively) were measured. In addition, the morphological (SEM), structural (XRD), and thermal (DSC) properties of the complex coacervates were investigated in comparison with the milk protein concentrate. Complex coacervates showed the shear-thinning behavior due to a linear decrease of complex viscosity with increasing frequency. Furthermore, the highest complex modulus and the more compact structure under optimal conditions, in terms of the ratio of protein to chitosan and pH, revealed strong electrostatic bonding between proteins and chitosan. All coacervates showed a G' > G″ (Tanδ<1), indicating the formation of an interconnected gel-like structure that was described by the power law model. The maximum fracture stress was obtained at optimum conditions (R = 15:1, pH =6.7 for HMC; R = 10:1, pH =5.5 for MMC and R = 5:1, pH =4.6 for LMC), indicating the highest intermolecular interaction between milk proteins and chitosan. The coacervates had a completely amorphous structure similar to MPC, and according to DSC results, the ionic bonds between milk proteins and chitosan were not destroyed up to 300 °C. Coacervation leads to purified milk proteins at a low cost. In addition, the coacervates can be used for the encapsulation of heat-sensitive compounds, and also as a stabilizer to improve the texture of food.

Thermogravimetry coupled with simultaneous evolved gas analysis by mass spectrometry was used for discerning organic compounds released during the thermal degradation of paint whose chemical compositions are not readily accessible. Thermogravimetric analyses up to 600°C revealed distinct degradation patterns under inert and oxidative conditions. Significant degradation of paint initiates at around 360°C and concludes at 500°C in a nitrogen atmosphere.

Introduction: This article presents the fourth detection of macroscopic cystic lesions due to sarcocystosis in domestic pigs during routine meat inspection worldwide, and the first molecular detection of in a domestic pig in Poland. Pigs can become intermediate hosts for by accidental ingestion of oocysts or sporocysts present in food or water contaminated by the faeces of canids (definitive hosts).
Material And Methods: The affected swine showed no clinical symptoms such as weight loss, dermatitis or dyspnoea suggesting sarcocystosis.

Chondroitin sulfate (CS) and glucosamine (GlcN) are indicated for the treatment of some inflammatory diseases, such as osteoarthritis, mainly because of the anti-inflammatory effects in reducing metalloproteinases activities (MMP), and other inflammatory mediators. Herein, we reported the structure of the CS, the anti-inflammatory and protective effects of the CS, and GlcN administration in ulcerative colitis model induced by dextran sulfate sodium (DSS) in rats. Purpose: To compare football players who have undergone one anterior cruciate ligament (ACL) reconstruction (ACLR) with those who have undergone a subsequent ACLR (revision or contralateral) regarding (1) demographics, (2) football-related factors and (3) injury-specific data.
Methods: Players who voluntarily completed a football-specific questionnaire available at the Swedish National Knee Ligament Registry website between April 2017 and September 2020 at the time of their primary ACL injury were included in the study. The questionnaire covered demographics, football-related activities and injury-specific factors.
