This study examined the effects of the inclusion of mung bean protein (MBP) on the direct expansion characteristics of corn starch during twin-screw extrusion. Six blends of corn starch and MBP isolate (0%, 5%, 10%, 15%, 20%, and 25% w/w) were hydrated to three different moisture contents (MCs) (16%, 19%, and 21% w.b.). The blends were extruded using a twin-screw extruder at three screw speeds (SSs) (300, 400, and 500 rpm). The resulting extrudates were evaluated for their water solubility index, water absorption index, expansion ratio (ER), true density, unit density, and porosity. As the protein content increased, the porosity of the extrudates increased. The ER of all extrudates ranged from 2.90 to 5.46, with the largest ER observed at an SS of 400 rpm, an MC of 19%, and 25% MBP inclusion. The porosity of the extrudates ranged from 1.79% to 11.42%. SS and protein content had a significant impact (p < 0.05) on the porosity and ER of the extrudate. PRACTICAL APPLICATION: This work provides valuable information for the industry on utilizing mung bean protein in direct expanded corn starch-based extruded snacks. The information could be useful in the development of high-protein extruded snacks and breakfast cereals.

Background: Gastrointestinal diseases in weaned piglets are a frequent cause of high morbidity and mortality in domestic pigs. The use of antibiotics is problematic due to increasing antibiotic resistance in bacterial populations, for which reason the use of suitable probiotics is highly recommended to maintain animal health and welfare.
Results: In this study, 57 strains of biologically safe lactic acid bacteria (LAB) and bifidobacteria originating from the gastrointestinal tract (GIT) of pigs were identified and characterized in terms of their probiotic properties for potential use in weaned piglets.

Chromium-based lignosulfonate (CrLS) deflocculants that are commonly used in water-based drilling muds (WBDMs) to deflocculate bentonites under high temperature (HT), high-pressure (HP), and high-salinity (HS) oil well drilling conditions have been found to contain heavy metals such as chromium, which is toxic and degrades rapidly. However, different ways of addressing this issue have been proffered, including the use of natural polymers such as starch, cellulose, or anionic inorganic agents such as sodium polyphosphates with little or no impact. Other lignosulfonate (LS)-based deflocculants, like sodium-based LS and bio-based LS, have shown a number of benefits, such as being better for the environment, more soluble and evenly distributed in WBDMs, more resistant to salt contamination, easily biodegradable, safe, and able to go through different chemical changes.

The beneficial effects of dietary fiber for colon health may be due to short chain fatty acids (SCFAs), such as butyrate, produced by colonic bacterial fermentation. In contrast, obesogenic diet induced obesity is linked to increased colon cancer incidence. We hypothesize that increasing fiber intake promotes healthy microbiome and reduces bacterial dysbiosis and oncogenic signaling in the colon of mice fed an obesogenic diet.

With the growing attention on green starch modification technologies, this study investigates the regulatory effects of alternating magnetic field treatment on the fine structure and functional properties of pregelatinized cassava starch at different treatment times (10 min, 30 min, 50 min).The results demonstrate that magnetic field treatment not only increased starch cracks and compactness but also promoted molecular chain breakage and reorganization, hydrogen bond formation, and starch recrystallization, thereby enhancing molecular order. Moreover, the treated starch exhibited improved solubility and swelling power, alongside a positive impact on the content of slowly digestible starch.
