Understanding the mechanisms underlying the dispersion and digestion process is vital in the development of oral lipid-based formulations (LBFs). In vitro lipolysis models mimic the digestion process in the stomach and intestine to explore the fundamental mechanism of supersaturation, solubilization, and precipitation of drugs within the LBFs. The lipid digestion is controlled by the in vitro experimental conditions, and constitution of the lipid formulations. Hence, there is a continuous upgradation in the digestion models to best extrapolate the in vivo conditions. This review covers the recent developments in digestion models with media compositions and lipid formulation components. Key findings from recent studies that thoroughly examined the relation between the digestion, solubilization, and permeation of oral LBFs in the presence of bile-lipid aggregates are presented. These developments are foremost to build the in vitro-in vivo correlation of the drugs for regulatory considerations.

Food-grade titanium dioxide (E171) is widely used in food, feed, and pharmaceuticals for its opacifying and coloring properties. This study investigates the formation of reactive oxygen species (ROS) and the aggregation behavior of E171 using the TNO Gastrointestinal (GI) model, which simulates the stomach and small intestine. E171 was characterized using multiple techniques, including electron spin resonance spectroscopy, single-particle inductively coupled plasma-mass spectrometry, transmission electron microscopy, and dynamic light scattering.

The nutritional value of any food product has historically been measured by the calorific value of individual components, harking back to the days of the development of the bomb calorimeter. A fuller understanding of nutrition later took into account the need for specific components, such as proteins, carbohydrates, vitamins and minerals, that ere known to be required for good human health and growth. In milk and milk products, these include casein and whey proteins, lactose, milk fat triacylglycerides, minor lipid components (both charged and neutral), calcium, and micronutrients.

Alcohol-related liver disease (ALD) is a major cause of global morbidity and mortality, progressing from steatosis to cirrhosis and hepatocellular carcinoma. While liver biopsy remains the gold standard for identifying liver disease, non-invasive methods like shear wave dispersion (SWD) elastography offer promising alternatives. This scoping review evaluates SWD's potential in the study of ALD, comparing it to metabolic dysfunction-associated steatotic liver disease (MASLD).

The present investigation deals with comparisons drawn among three types of different mustard seed coat colors, namely, Black (), Brown (), and White (), with respect to protein's bio-availability through pepsin digestibility, with and without the involvement of major anti-nutritional factors (glucosinolate type AITC, Allylisothiothiocyanate) and relative food functions. These are validated by means of crude protein determination, precipitated protein isolate preparation for evaluating the fat absorption capacity (FAC), emulsifying activity (EA), emulsion stability (ES), whippability, foam stability (FS), the nitrogen solubility index (NSI), and the protein dispersibility index (PDI). The results indicate that the partial removal of glucosinolates from brown mustard (0.

Coenzyme Q10 (CoQ10) is a powerful antioxidant. However, the poor water solubility and low bioavailability still remain challenges for its application. An embedded delivery system of CoQ10 based on whey protein concentrate (WPC) and polymerized whey protein concentrate (PWPC) was prepared, and the physicochemical properties, antioxidant capacity and bioavailability were characterized in this study.
