In contemporary markets, fish are frequently wrapped in cling film, necessitating consumers' reliance on visual cues to assess freshness. This study explores whether common Japanese consumers can accurately discern fish freshness based solely on visual information. We conducted an online experiment with 529 randomly selected participants in Japan by asking them to select the freshest fish from photographs of horse mackerel with varying freshness levels. In order to elucidate the mechanism of freshness detection, we conducted principal component analysis on the quantified body color and shape data. Additionally, we measured physical characteristics such as lipid contents, gloss, length, and weight of the fish. This study examines the correlation between these visual cues and consumers' judgments, revealing the accuracy of visual indicators used by consumers in daily assessments of fish freshness. These findings suggest that a portion of Japanese consumers can correctly identify the freshness of fish based on appearance. They primarily rely on the brightness of the fish's eyes and specific color combinations of the body to judge freshness, with the shape of the fish having less impact. Comparing the selection frequency between high- and low-accuracy participants, we observed that a low accuracy in freshness detection was not solely due to a lack of sensitivity to signals from photographs, but may also result from a misinterpretation of these signals by consumers.

Objective: Differing from the overall consumption of alcohol, whether consuming large quantities of alcohol per drinking occasion is associated with higher risk of developing severe diabetic retinopathy remains unknown.
Methods: We examined whether the quantity per drinking occasion (QPO), including a large QPO, and the combinations of the frequency of alcohol consumption (FAC) and QPO were associated with higher risk of developing severe diabetic retinopathy or diabetic macular edema (DME) using adjusted Cox models. Severe diabetic retinopathy or DME was designated as a vision-threatening treatment-required diabetic eye disease (TRDED).

However, the governance of unsafe food recall information in China is distorted, leading to cognitive dissonance in Chinese consumers' perceptions of unsafe food recall information. Focusing on consumers' search and cognitive costs, this study suggests that market regulators should proactively and fully disclose unsafe food recall information to satisfy consumers' needs and preferences for recall information, thereby optimizing consumer perceptions and facilitating the improvement of the information governance system for unsafe food recalls.

Overconsumption of fat contributes to obesity and low adherence to dietary therapy in patients with obesity. The frequency of consuming soup dishes containing "dashi" (Japanese broth), a characteristic element of the Japanese diet, is negatively associated with obesity indicators. The use of dashi is considered one of the reasons why the low-fat Japanese diet is popular; however, whether and how dashi controls the selection and intake of fat is unknown.
