Our diets are the greatest determinant of health, and what we eat is sustained and shaped by the food we produce. Food systems have increased production to feed the growing world population, which has also led to a dietary transition, with increases in energy and protein intakes, and only modest improvements in micronutrient density. Thus, undernutrition has decreased globally, while non-communicable diseases are dramatically increasing.

Life Cycle Assessment (LCA) is acknowledged to be suited for the assessment of the energy-environmental burdens of foods, which are estimated to be overall one of the main impact sources worldwide. A right nutrition is even more fundamental for the healthy growing of the population, which has now, however, to consider ever more the aspect connected to its environmental impact. Under this perspective, this study aims at exploring the environmental burdens associated with a local university canteen for students through the application of LCA to a set of meal combination scenarios offered weekly to consumers.

Earth: An Oxidative Planet with Limited Atom Resources and Rich Chemistry.

Angew Chem Int Ed Engl

November 2024

Departamento de Bioquímica y Biología Molecular B y Inmunología, Facultad de Química, Universidad de Murcia, E-30100, Murcia, Spain.

Humanity faces an unprecedented survival challenge: climate change, driven by the depletion of natural resources, excessive waste generation, and deforestation. Six out of nine planetary boundaries have been exceeded, signaling that Earth is far from a safe operating space for humanity. In this Viewpoint Article we explore three critical "atomic-molecular" challenges: Earth's limited atomic resources, its oxidative nature, and very rich chemistry.

Transforming food systems through agroecology: enhancing farmers' autonomy for a safe and just transition.

Lancet Planet Health

November 2024

ETH Zurich, Department of Environmental Systems Science, Zurich, Switzerland.

Food systems contribute to multiple crises while failing to deliver healthy, nutritious food for all. A substantial amount of research suggests that the root cause of this issue lies in the complete integration of food systems within global capitalism and the consequent subordination of fairness and sustainability to profit accumulation. We draw on critical political economy to explore how the integration of food systems within global capitalism and their subordination to profit occur.
