Food-related functional substances with biological activity serve as a crucial material foundation for achieving precision nutrition, which has gained increasing attraction in regulating physiological functions, preventing chronic diseases, and maintaining human health. Nutritional substances typically include bioactive proteins, peptides, polysaccharides, polyphenols, functional lipids, carotenoids, probiotics, vitamins, saponins, and terpenes. These functional substances play an essential role in precise nutrition. This chapter introduces and summarizes typical functional substances to demonstrate the challenges in precision nutrition for their stability, solubility, and bioavailability. The current status of delivery systems of functional substances is described to give an insight into the development of desirable characteristics, such as food grade status, high loading capacity, site targeting, and controlled release capacity. Finally, the applications of food-borne delivery systems of functional substances for precision nutrition are emphasized to meet the requirement for precision nutrition during nutritional intervention for chronic diseases.

Sativene-related sesquiterpenoids including -sativene analogs are a large member of fungal secondary metabolites with phytotoxic and growth-promoting effects on different plants. In this report, a series of sativene-related sesquiterpenoids with diverse carbon skeletons (-, sativene/isosativene/-sativene/cyclosativene/-isosativene ring systems) were isolated from the plant pathogenic fungus based on a molecular networking strategy. The undescribed structures were elucidated based on NMR spectra, X-ray diffraction analysis, chemical derivation, and calculated electronic circular dichroism calculations.

Ovariohysterectomy (OVH) is a common procedure in bitches, where ovarian suspensory ligament (OSL) rupture facilitates hemostasis but may also have adverse effects. Given the importance of minimizing the surgical stress response, this study aimed to evaluate the impact of OSL rupture in 20 healthy bitches undergoing elective open OVH; a celiotomy via the ventral midline was performed, and hemostasis achieved using bipolar coagulation, either with OSL rupture (OSL-R) or without (OSL-NR). Pain was assessed over 24 h post-surgery using the Visual Analogue Scale and the Short Form of the Glasgow Composite Measure Pain Scale.

Whey fermentation could produce bioactive substances with immunomodulatory effects, metabolic syndrome modulation, and antioxidant properties, thereby imparting functional characteristics to products and facilitating the development of novel foods with health-promoting potential. A non-targeted metabolomics approach using liquid chromatography-mass spectrometry (LC-MS) was employed to investigate changes in the metabolite profiles of whey fermented by strain KM812 over varying fermentation durations. The findings demonstrated a progressive enrichment of metabolites over time.
