Flavonoids are a group of plant secondary metabolites that have a number of health-promoting properties and have both preventive and therapeutic effects. Research confirms that flavonoids work, among others: antiviral and anticancer. Apigenin, luteolin, isorhamnetin, kaempferol, myricetin, quercetin, hesperetin, naringenin, epicatechin and genistein have documented antiviral activity.

Dietary selenium (Se) is vital for human health and can be provided through consumption of Se-rich vegetables. Soil Se is often poorly available and so biofortification using Se-enriched fertilizers is used to enhance dietary intake. This study aimed to (a) evaluate the feasibility of biofortifying vegetables, commonly grown in the calcareous soils of Kurdistan, with a single application of Se (10 g ha) as selenate and, (b) trace the fate of applied Se using an enriched stable isotope, ⁷⁷Se.

This study aimed to explore antibiotic resistance characteristics and species of heterotrophic endophytic bacteria (HEB) in four kinds of edible raw vegetables, including radishes, lettuces, onions, and tomatoes. A total of 144 HEB were isolated and tested for resistance to sulfamethoxazole (SMZ), tetracycline (TET), cefotaxime (CTX), and ciprofloxacin (CIP), and their species were identified by 16S rRNA gene sequencing. Antibiotic resistance genes (ARGs) and class I integron in antibiotic-resistant isolates were analyzed by polymerase chain reaction.

In the context of food transition, the agrifood sector has experienced increasingly strong demand for horticultural products. Fresh fruits and vegetables are mainly vehicles of microorganisms, including pathogens that cause human infections. Food safety and compliance with health standards in the fruits and vegetable value chain are significant concerns and multiple challenges, given the prevalence of foodborne pathologies in Southern countries, particularly in Senegal.
