A boron-catalyzed Michael reaction using pairs of carboxylic acids was developed. The reaction occurs through dual activation of the two substrates by a boron catalyst, which facilitates boron enolate formation from the donor carboxylic acid with simultaneous activation of the α,β-unsaturated carboxylic acid as the acceptor. α-Aryl and α-alkenyl carboxylic acids were applicable as donors. The versatility and utility of this reaction were demonstrated by the direct use of pharmaceuticals as donor carboxylic acids.

C-H activation is the most direct way of functionalizing organic molecules. Many advances in this field still require specific directing groups to achieve the necessary activity and selectivity. Developing C-H activation reactions directed by native functional groups is essential for their broad application in synthesis.

The formation of flavor in fermented vegetables is directly associated with the interactions among the resident microbial strains. This study explored the cooperative dynamics between Lactobacillus plantarum and Rhodotorula mucilaginosa in a simulated cabbage juice system. The obtained results indicated that the co-cultivation of these strains accelerated fermentation kinetics and enhanced lactic acid production.

Raw pork is prone to oxidation and rancidity as it contains a high level of unsaturated lipid molecules. Reliable biomarkers to benchmark pork freshness and their formation have not been systematically investigated. The results indicated that the peroxide values, TVB-N and rancid volatiles dramatically increased in pork during the storage period (4 °C, 0-9 d).

Continuous supply of NADPH is necessary for the synthesis of ROS, which can be derived from the decarboxylation of malic acid, providing fuels for RbOHs to sustain ROS production. However, excessive accumulations of ROS lead to significant chilling injury (CI) in peaches during cold storage. Our previous studies indicated that hot air (HA) slows the CI progression in peaches by preventing malate degradation.
