Endosperm is the main storage organ in cereal grain and determines grain yield and quality. The molecular mechanisms of heat shock proteins in regulating starch biosynthesis and endosperm development remain obscure. Here, we report a rice floury endosperm mutant flo24 that develops abnormal starch grains in the central starchy endosperm cells. Map-based cloning and complementation test showed that FLO24 encodes a heat shock protein HSP101, which is localized in plastids. The mutated protein FLO24 dramatically lost its ability to hydrolyze ATP and to rescue the thermotolerance defects of the yeast hsp104 mutant. The flo24 mutant develops more severe floury endosperm when grown under high-temperature conditions than normal conditions. And the FLO24 protein was dramatically induced at high temperature. FLO24 physically interacts with several key enzymes required for starch biosynthesis, including AGPL1, AGPL3 and PHO1. Combined biochemical and genetic evidence suggests that FLO24 acts cooperatively with HSP70cp-2 to regulate starch biosynthesis and endosperm development in rice. Our results reveal that FLO24 acts as an important regulator of endosperm development, which might function in maintaining the activities of enzymes involved in starch biosynthesis in rice.

Waxy maize is highly preferred diet in developing countries due to its high amylopectin content. Enriching amylopectin in biofortified maize meets food security and fulfils the demand of rising industrial applications, especially bioethanol. The mutant waxy1 (wx1) gene is responsible for increased amylopectin in maize starch, with a wide range of food and industrial applications.

Dihydroporphyrin iron (DH-Fe) is a novel plant growth regulator that plays significant roles in plant stress resistance. We found that is extremely sensitive to low temperature (LT) with a threshold of 25°C. To evaluate whether and how DH-Fe alleviates LT stress in , different DH-Fe concentrations (0, 10, 20, and 40 μg·L) were applied to estimate its effects on C and N metabolism and antioxidative capacity in grown under 20°C.

Potato is the fourth-most important food crop around the world, and most of the potatoes are used for foodstuffs and starch products. The aim of this paper is to identify the volatile compounds and metabolites in potatoes with different processing properties. The results showed large differences of volatile and metabolite compounds such as 2,4-Heptadienal and rhoifolin in potatoes and indicated the potential regulations between volatile compounds and metabolites.

Previous research on cadmium (Cd) focused on toxicity, neglecting hormesis and its mechanisms. In this study, pakchoi seedlings exposed to varying soil Cd concentrations (CK, 5, 10, 20, 40 mg/kg) showed an inverted U-shaped growth trend (hormesis characteristics): As Cd concentration increases, biomass exhibited hormesis character (Cd5) and then disappear (Cd40). ROS levels rose in both Cd treatments, with Cd5 being intermediate between CK and Cd40.
