The contamination of food and animal feeds with mycotoxions, particularly aflatoxin B1 (AFB1), poses significant risks to human health and causes economic losses. This study investigated bacteria from various fermented milk products to assess their ability to detoxify AFB1. A variety of household fermented kefir milk, kefir-like beverages, and kefir grains were collected from rural areas and subjected to microbiological analysis.

Oxidative stress, characterized by the damaging accumulation of free radicals, is associated with various diseases, including cardiovascular, neurodegenerative, and metabolic disorders. The transcription factor Nrf2 is pivotal in cellular defense against oxidative stress by regulating genes that detoxify free radicals, thus maintaining redox homeostasis and preventing cellular aging. Keap1 plays a regulatory role through its interaction with Nrf2, ensuring Nrf2 degradation under homeostatic conditions and facilitating its stabilization and nuclear translocation during oxidative stress.

Previous studies conducted with the opportunistic human fungal pathogen ( ) have revealed two extreme Cu environments encountered during infection: A high Cu environment within the lung and a low Cu environment within the brain. However, how senses these different host Cu microenvironments, and the consequences of a blunted Cu stress adaption for pathogenesis, are not well understood.
