Oenology, behind the more visible social and convivial aspects associated with the consumption of wine and spirits, has great complexity due to the coexistence of countless different styles of artisanal products, linked to the diversity of places grapes are grown and wine is produced, and its global distribution. Premium wine is not a commodity. To scientifically support such complexity requires an extremely rigorous and diversified scientific expertise, capable of supporting the continuous improvement of processes and products that are developed, evaluated, and offered on international markets. Rigorous chemical and sensory analyses are essential to this continuous process of improvement, and for several decades now have regularly brought together a large community of researchers from multidisciplinary backgrounds to share, discuss, and harmonize their knowledge and experience of wines. The 12 edition of In Vino Analytica Scientia 2022 was held in Neustadt, Germany, in July 2022. The conference was attended by over 240 delegates, from 23 nationalities, who shared different aspects of wine and spirits research, with 9 key note lectures; 37 full talks; 36 short communications, and over 200 posters. This special issue is a collection of full papers from a selection of contributed oral presentations and posters presented at the conference.

Background: Evidence on how beverage consumption modifies associations between air pollution (AP) exposure with the type 2 diabetes (T2D) risk remains scarce, which we aimed to investigate in this study.
Methods: A total of 77,278 adults from the UK Biobank cohort were enrolled. Annual average concentrations of fine particulate matter (PM and PM) and nitrogen oxides (NO and NO) were estimated to represent the long-term AP exposure using the land use regression model.

A varietal origin of eugenol was previously demonstrated in Baco blanc, a major grapevine variety used to produce Armagnac wine spirits. Eugenol was found in high amount, both as the free and as unidentified glycosylated forms. To reveal their identity, a specific method was developed and applied to berry skin extracts.

To clarify the effects of pervaporation and distillation on aroma profiles, the Sensomics approach investigated the aroma characteristics and key aroma compounds of Cabernet Sauvignon (CS) and Ugni Blanc (UB) grape spirits produced by pervaporation (UB-P, CS-P) and distillation (UB-D, CS-D). The results indicated that pervaporated grape spirits exhibited stronger floral and fruity aromas, while distilled grape spirits were characterized by more pronounced cooked apple and toasty aromas. Consumers preferred products with intense floral and fruity aromas and weaker cooked apple note.
