In this review, we explore the immunomodulatory properties of Korean foods, focusing on ginseng and fermented foods. One notable example is Korean red ginseng, known for its immune system-regulating effects attributed to the active ingredient, ginsenoside. Ginsenoside stimulates immune cells, enhancing immune function and suppressing inflammatory responses. With a long history, Korean red ginseng has demonstrated therapeutic effects against various diseases. Additionally, Korean fermented foods like kimchi, doenjang, chongkukjang, gochujang, vinegar, and jangajji provide diverse nutrients and bioactive substances, contributing to immune system enhancement. Moreover, traditional Korean natural herbs such as Nakai, Gomchwi, Beak-Jak-Yak, etc. possess immune-boosting properties and are used in various Korean foods. By incorporating these foods into one's diet, one can strengthen their immune system, positively impacting their overall health and well-being.

Introduction: Pine needles are a rich source of bioactive compounds, and there are few reports on the extraction and identification of active substances in various types of pine needles.
Objectives: The objective of this study is to enhance the efficiency and yield of pine needle essential oil extraction by employing an innovative ultrasonic-assisted salt-out hydrodistillation technology. It also aims to establish a correlation between gas chromatography-mass spectrometry (GC-MS) and electronic nose (E-nose) to distinguish essential oils from Cedrus deodara, Pinus thunbergii, Pinus massoniana, and Pinus koraiensis.

The ubiquitin-26S proteasome system (UPS) is associated with protein stability and activity, regulation of hormone signaling, and the production of secondary metabolites in plants. Though the mechanism of action of SmMYB36 on the tanshinone and phenolic acid biosynthesis is well understood, its regulation through post-translational modifications is unclear. A constitutive photomorphogenesis 9 (COP9) signalosome subunit 5 (SmCSN5), which interacted with SmMYB36 and inhibited its ubiquitination-based degradation, was identified in .

The endocarp of (ECG) is abundant in various bioactive components, such as polysaccharides; however, there are few studies on them. Thus, it is highly necessary to carry out further research on the structural characterization and biological activities of ECG polysaccharides (EPs), which are important bioactive substances. In this study, water-extracted EPs were precipitated by ethanol with final concentrations of 50%, 70%, and 90% (/), respectively.
