Ginger ( Roscoe, Zingeberaceae) is a medicinal plant widely used as food, spice, or flavoring agent worldwide. 6-Shogaol is a compound of prime interest in exhibiting anti-inflammatory, antioxidant and chemopreventive effects. The objective of the study is to investigate the effect of microwave-assisted drying (MAD) followed by microwave-assisted extraction (MAE) so as to produce 6-Shogaol enriched Ginger with improved therapeutic benefits. Various drying techniques shade drying, tray drying, microwave-assisted drying and osmotic dehydration as a pretreatment were used for drying Ginger rhizomes. The dried rhizomes were extracted by conventional solvent extraction and microwave-assisted extraction techniques and tested for content of 6-Shogaol using the newly developed HPLC method whereas total flavonoid and polyphenol content were determined using the UV spectrophotometric method. Subjecting the microwave dried Ginger to microwave-assisted extraction for 45 min at constant power level of 284 W resulted in a significant rise in the extractability of 6-Shogaol (1.660 ± 0.018), total polyphenols (855.46 ± 5.33) and flavonoids (617.97 ± 6.40) compared to the conventional method of extraction. The proposed Ginger processing method of microwave drying followed by microwave extraction outperforms traditional methods in terms of speed, convenience, and performance thus can be scaled up to industrial levels.

This study presents a novel gelatinization-induced whole-grain rice fortification (GIWGRF) technology using a microwave-assisted screw conveying spraying and drying setup (MASCSD). The process involves microwave-assisted soaking of pregelatinized rice in a micronutrient solution, followed by steam-assisted gelatinization and drying. Rice with an initial degree of gelatinization (DG) of 58.

The present study was aimed to determine the effect of ultrasound pretreatment and different drying methods viz sun drying, solar drying, cabinet drying, vacuum drying, microwave assisted drying and freeze drying on physicochemical, phytochemical activity, rehydration ratio and drying time of the purslane. The purslane was ultrasonicated for 15, 30, 45 and 60 min following by drying. The ultrasound pretreatment (60 min) combined with freeze drying retained the highest antioxidants (95.

Analytical methods for the determination of microplastics in sediments typically involve matrix drying, sieving, grinding, and flotation as part of the sample treatment. However, the real need for these steps and analytical validation studies are scarce. This work proposes a method that avoids the drying, sieving, and flotation procedures by using a direct acid attack of HNO₃/HCl (3:1) on wet sediment samples, assisted by microwave digestion.

Innovative foam drying technique for salted egg yolk powder production.

J Sci Food Agric

November 2024

School of Food and Biological Engineering, Jiangsu University, Zhenjiang, China.

Background: The powderization of salted egg yolks can circumvent the gelatinization issues that occur during frozen storage. In this study, salted egg yolk powder (SEYP) was prepared using microwave-assisted foam drying (MFD) technology.

Results: The results show that, compared to traditional microwave drying and hot-air drying, the SEYP prepared by MFD exhibits a bright color and a loose structure, and shows significant improvements in emulsifying properties, lecithin retention rate and antioxidant activity (P < 0.

This study aimed to evaluate the extraction efficiency of mucilage from Cordia dichotoma fruits using various aqueous extraction methods, including microwave-assisted water extraction (MWE), hot-water extraction (HWE), and cold-water extraction (CWE). Different analytical techniques were employed to characterize the Cordia dichotoma mucilage (CDM). Additionally, the functional properties, anti-microbial, anti-inflammatory, and dye reduction potential of CDM were assessed.
