Curcumin is a natural polyphenol derived from turmeric () root that has been used for centuries as a spice, coloring agent, and medicine. Curcumin presents anti-inflammatory, antioxidant, anticarcinogenic, antimicrobial, antiviral, antimalarial, hepatoprotective, thrombosuppressive, cardiovascular, hypoglycemic, antiarthritic, and anti-neurodegenerative properties. It scavenges different forms of free radicals and acts on transcription factors, growth factors and their receptors, cytokines, enzymes, and genes, regulating cell proliferation and apoptosis. Curcumin is electroactive, and a relationship between its electron transfer properties and radical-scavenging activity has been highlighted. The objective of this review is to provide a comprehensive overview of the curcumin electron transfer reactions, with emphasis on the controversial aspects related to its oxidation mechanism. The final sections will focus on the electroanalysis of curcumin in natural products, highlighting the most important sensing strategies, based on functional electrodes and nanostructured materials, essential for the development of more efficient in vitro methods of detection and quantification of curcumin in food samples, supplements, and nutripharmaceuticals.

Choerospondias axillaris is a medicinal plant used for treating coronary heart disease (CHD) due to its broad spectrum of anti-inflammatory activities. Cyclooxygenase 2 (COX-2) and lipoxygenase 5 (5-LOX) were immobilized on magnetic nanoparticles for selective ligand-extraction of these two enzymes present in C. axillaris.

Developing low-toxicity, high-efficacy, and fast-acting strategies to manage acute liver injury (ALI) is critical due to its rapid progression and potential for severe outcomes. Curcumin (CUR) has shown promise in ALI therapy due to its ability to modulate the inflammatory microenvironment by scavenging reactive oxygen species (ROS). Nevertheless, CUR is highly hydrophobic limiting its bioavailability and effective in vivo transport, which hinders its further application.

Background: As amyloid-β (Aβ) aggregates are considered as the biomarkers and key factors in the pathology of Alzheimer's disease, there has been extensive investigation into Aβ-targeting compounds for the development of diagnostics and drug discovery related to the disorder. However, the polymorphic and heterogenous nature of Aβ aggregates impedes the structural understanding of their structure. Consequently it is a major challenge to develop new diagnostic and therapeutic development of AD and to study the mechanism of Aβ-targeting compounds.

Eutectic solvents (ESs) have shown great efficiency on increasing the solubility, stability, and bioactivity of active pharmaceutical ingredients (APIs) in recent research studies. Curcumin is an important API driven from natural plants, which displayed a series of biofunctions like antibacterials, anti-inflammatory, and anticancer activities etc. However, its poor water solubility and stability hindered its further clinic application.

Frying is one of the oldest cooking methods, widely used to prepare crispy and flavorful foods. However, a significant concern with fried foods is the high amount of oil absorption. The application of edible coatings is a common approach to reducing oil absorption in fried potatoes.
