The rest raw materials of whitefish have great potential for increased utilisation and value creation. Whitefish heads have a high protein content and should be considered a healthy protein source for the growing population's demands for sustainable protein. In this study, the heads of four different species of whitefish were processed via enzymatic hydrolysis, namely cod (), cusk (), haddock (), and saithe (), using three commercially available enzymes. Trials were conducted after 0, 3, and 6 months of the frozen storage of heads. A proximate analysis, molecular weight distribution, and protein solubility were evaluated for each of the products. The results show that, although the enzymatic hydrolysis of rest raw materials from different species of whitefish yielded products of slightly different characteristics, this process is viable for the production of high-quality protein from cod, cusk, haddock, and saithe heads. Six months of frozen storage of heads had a minimal effect on the yield and proximate composition of hydrolysates.

Teleost B cells producing neutralizing antibodies contribute to protection against salmonid alphavirus (SAV) infection, the etiological agent of pancreas disease, thereby reducing mortality and disease severity. Our previous studies show differences in B cell responses between the systemic immune tissues (head kidney (HK) and spleen) and the peritoneal cavity (PerC) after intraperitoneal SAV3 infection in Atlantic salmon () where the response in PerC dominates at the late time points. By employing the same infection model, we aimed to further characterize these B cells.

Alternative splicing (AS) is an important post-transcriptional regulation, which can expand the functional diversity of gene products and is a mechanism for eukaryotes to cope with abiotic stress. However, there are few studies on AS events in rainbow trout under heat stress. In this study, RNA-Seq data were used to clarify the effect of selenium nanoparticles (SeNPs) on the AS events of rainbow trout head kidney under heat stress.

Article Synopsis
  • * The research highlights the nutritional profile of minced salmon heads, revealing they are rich in lipids, particularly oleic acid, and identifies key lipid classes like triglycerides and phospholipids.
  • * Despite limited findings on antioxidant properties, the high triglyceride content suggests potential industrial applications, including fish oil production, biodiesel, and cosmetic ingredients.

Article Synopsis
  • The study investigates the colony-stimulating factor-1 receptor (MCSFR) in rainbow trout, identifying four gene variants, including two previously unrecognized, and explores their expression levels in various tissues.
  • The protein structure of MCSFRs includes five immunoglobulin-like domains and suggests a conserved function across species.
  • Following infection with Yersinia ruckeri, different MCSFR paralogues exhibit unique expression patterns, showing complex regulatory mechanisms influenced by various stimuli, enhancing the understanding of immune responses in fish.
