Lactic acid bacteria (LAB) are pivotal in shaping the technological, sensory, and safety aspects of dairy products. The evaluation of proteolytic activity, citrate utilization, milk pH reduction, and the production of organic compounds, acetoin, and diacetyl by cheese associated LAB strains was carried out, followed by Principal Component Analysis (PCA). Citrate utilization was observed in all (.) (.) and (.) strains, and in some (.) strains. Most strains exhibited proteolytic activity, reduced pH, and generated organic compounds. Multivariate PCA revealed as a prolific producer of acetic, lactic, formic, and pyruvic acids and acetoin at 30 °C. sp. was distinguished from based on acetic, formic, and pyruvic acid production, while primarily produced lactic acid at 37 °C. At 42 °C, (.) and some subsp. strains excelled in acetoin production, whereas subsp. and () strains primarily produced lactic acid. stood out with its production of acetic, formic, and pyruvic acids. Overall, cheese-associated LAB strains exhibited diverse metabolic capabilities which contribute to desirable aroma, flavor, and safety of dairy products.

This work investigates the optimization of medium-chain carboxylate (MCC) production through xylan mixed-culture monofermentation. The pH screening in batch assays showed that the hydrolysis stage and selectivity towards MCC precursors were optimised at pH 6. Subsequently, a continuous stirred tank reactor (CSTR) and a Sequential Batch Reactor (SBR) were operated at different Hydraulic Retention Times (HRT), revealing that the SBR at HRT 2 days yielded the highest caproic acid since lactic acid availability and chain elongation process were balanced.

This case report presents a newborn with pyruvate dehydrogenase complex deficiency who developed significant lactic acidosis and acute kidney injury after birth. Peritoneal dialysis with glucose-based peritoneal dialysis fluid was initially started, but the patient had worsening hyperglycemia and lactic acidosis, likely related to excess glucose reabsorption with shunting to lactate due to the underlying metabolic disorder. As amino acid-based dialysis solution was not available in our formulary, a dialysis fluid was manually created with Vaminolact, which was commonly used in neonatal parenteral nutrition.
