Valuable substituted phenols are accessible via the selective decarboxylation of hydroxybenzoic acid derivatives using multifunctional catalysts composed of bimetallic iron-ruthenium nanoparticles immobilized on an amine-functionalized supported ionic liquid phase (FeRu@SILP+IL-NEt). The individual components of the catalytic system are assembled using a molecular approach to bring metal and amine sites into close contact on the support material, providing high stability and high decarboxylation activity. Operating under a hydrogen atmosphere was found to be essential to achieve high selectivity and yields. As the catalyst materials enable also the selective hydrogenation and hydrodeoxygenation of various additional functional groups (i.e., formyl, acyl, and nitro substituents), direct access to the corresponding phenols can be achieved via integrated tandem reactions. The approach opens versatile synthetic pathways for the production of valuable phenols from a wide range of readily available substrates, including compounds derived from lignocellulosic biomass.

Background: The objective of the present study is to examine the total phenolic and flavonoid content of an ethanol extract of and to evaluate its phytochemical properties, antioxidant activity, and capacity to protect DNA from damage. This pharmaceutical/food resource mushroom may serve as a novel substitute functional food for health-conscious consumers, given its promising source of phenolics and flavonoids.
Methods: ethanol extract (SEE) was evaluated for total phenolic and flavonoid contents, while UPLC-MS analysis was used for terpenoids, phenylpropanoid, flavonoids, steroidal, phenols identification, and function prediction.

The aims of this study were to improve the functional and nutritional properties of fermented black carrot juice by using sweet and acid whey in the production of fermented black carrot juice, to transform whey into a value-added product and to determine the effect of whey addition on the fermentation process. Whey was utilized as a water substitute in the formulation of the beverage prior to fermentation, and five distinct formulations were developed based on the type and proportion of whey (0% whey (control sample), 25% acid whey, 100% acid whey, 25% sweet whey, 100% sweet whey). The H- and C-NMR spectra of three substituted N-(4-hydroxyphenyl)pyridinium perchlorates, precursors of solvatochromic 4-pyridiniophenolate betaines, were recorded in deuterated acetone, dimethylsulfoxide, and acetonitrile, and their spectral behavior in these solvents was analyzed as evidence of the solute-solvent interactions present in solution. The effect of the increasing orthogonality between the phenolic and pyridinium fragments was clearly evident from the obtained spectra, thus shedding light on the ground-state structures of their deprotonated solvatochromic derivatives and their interactions with the solvent.
