Identifying nonallergenic, natural water binders to increase beef patty juiciness and extend shelf life would be beneficial to the beef industry. The objective of this study was to determine the effect of integrating water binders into beef hamburger patties on cooking yield, shelf life, and pH. Five water binder treatments were added at 2% of the meat block. Treatments included potato extract, citrus fiber, dried refried beans, potato peel, or no binder (control). Six batches of each treatment were made and two patties from each batch were analyzed for each parameter. Fluid yield and lipid oxidation were measured on cooked, frozen (210 d), and reheated patties. Raw patties were used to evaluate color, fluid loss, and lipid oxidation over 4 d of retail display. Patties containing citrus fiber improved reheat yield (= 0.03) and overall yield (< 0.01). Citrus patties had the lowest pH ( < 0.01) at 5.45. On days 0 and 4 of retail display, patties containing a water binder treatment had less lipid oxidation than the control patties ( < 0.01). Additionally, the cooked, frozen, and reheated patties, had less lipid oxidation when containing a water binder treatment than the control patties ( < 0.01). Citrus fiber improved water retention in reheated patties, and all water binders delayed lipid oxidation in raw, cooked, frozen, and reheated patties. Increasing patty juiciness and delaying lipid oxidation will improve consumers' eating experience of reheated, precooked patties in settings such as school or hospital cafeterias.

Heatable super hydrophobic polyurethane (PU) sponges (S-GNS/CNT/PVA@PU) containing three-dimensional (3D) carbon nano-networks (CNNs) coatings made from two-dimensional (2D) expanded graphite nano-sheets (GNS) bridged by one-dimensional (1D) carbon nano-tubes (CNT) were constructed using polyvinyl alcohol (PVA) as binder, in which light and/or electric energy could be rapidly converted into heat to reduce the viscosity of spilled heavy oils, resulting in greatly increased oil. Their heavy oil recovery rate could reach 792 kg/(m·h) under combined light and Joule heating of 1 sun and 5 V. Surface heat dissipating coefficient Ks, heat dissipating index n, and surface heat absorption capacity Cs were studied relating to sizes and shapes of surface heating fields under varied heating modes.

This study explores improving proton exchange membrane water electrolysis (PEMWE) by achieving both cost-effectiveness and enhanced efficiency through the replacement of the costly and environmentally challenging Nafion ionomer with hydroxypropyl methylcellulose (HPMC) as an anode binder. HPMC, an eco-friendly and cost-effective material, was cross-linked with citric acid to form a durable hydrogel that enhances water and proton transport within the catalyst layer. Using the cross-linked HPMC binder allowed a reduction in cost to 1/54 compared to Nafion ionomer, while the performance of the cross-linked HPMC electrodes remained comparable to Nafion electrodes.

The effectiveness of the stabilisation/solidification process depends upon a number of factors, the most significant of which are the type of binder, contaminants, and soil undergoing treatment. In accordance with the principles of sustainable construction, alternatives to cement are sought after, with the objective of achieving the lowest environmental impact while maintaining a high level of strength and effective binding of the contaminant. In the study of the stabilisation/solidification of zinc-contaminated loess, incinerated sewage sludge fly ash with reactive magnesia was selected as the binder, and the UCS of the mixtures and microstructure was verified after 28 days of treatment.
