Polyunsaturated fatty acids (PUFAs) and their oxidized products (oxylipins) are important mediators in intra- and extra-cellular signaling. We describe here the simultaneous quantification of 163 PUFAs and oxylipins using liquid chromatography-mass spectrometry (LC-MS). The protocol details steps for PUFA purification from various biological materials, the conditions for LC-MS analysis, as well as quantitative approaches for data evaluation. We provide an example of PUFA quantification in animal tissue along with the bioinformatic protocol, enabling efficient inter-sample comparison and statistical analysis. For complete details on the use and execution of this protocol, please refer to Vila et al., Costanza et al., Blomme et al., and Blomme et al..

The Role of Meat Lipids in Nutrition and Health: Balancing Benefits and Risks.

Meat lipids are determinants of the nutritional, sensory and physiological qualities of meat, encompassing triglycerides, phospholipids, cholesterol and bioactive compounds. These lipids provide essential fatty acids, including omega-3 and omega-6 polyunsaturated fatty acids, critical for metabolic regulation, inflammation control and cognitive health. However, the dual role of meat lipids as essential nutrients and potential contributors to health risks, such as cardiovascular disease and oxidative stress, necessitates a nuanced understanding.

ART and Reproductive Biology Laboratory, University Hospital and School of Medicine, Picardie University Jules Verne, CHU Sud, 80000 Amiens, France.

Today, accumulating evidence highlights the impact of oxidative stress (OS) on semen quality. It is considered to be a key factor contributing to the decline in male fertility. OS is detected in 30-80% of men with infertility, highlighting its strong association with impaired reproductive function and with clinical outcomes following the use of assisted reproductive technologies.

Background/objectives: Dysgeusia contributes to malnutrition and worsens the quality of life of patients with cancer. Despite the different strategies, there is no effective treatment for patients suffering from taste disorders provided by the pharmaceutical industry. Therefore, we developed a novel strategy for reducing side effects in cancer patients by providing a novel food supplement with the taste-modifying glycoprotein miraculin, which is approved by the European Union, as an adjuvant to medical-nutritional therapy.

As an endurance multi-sport race, triathlon places significant energy demands on athletes during performance and training. Insufficient energy intake from food can lead to low energy availability (LEA) and Relative Energy Deficiency in Sport (RED-S). We aimed to measure symptoms related to LEA, examine the risk of RED-S, and find how diet relates to the risk of RED-S in highly trained female amateur triathletes.

Marine organisms, including shrimps, have gained research interest due to containing an abundance of bioactive lipid molecules. This study evaluated the composition and the in vitro biological activities of amphiphilic bioactive compounds from four different wild shrimp species: , , , and . Total lipid (TL) extracts were obtained from shrimp and separated into total amphiphilic (TAC) and total lipophilic (TLC) compounds.
