Chicken age contributes to the meat characteristics; however, knowledge regarding the pathways and proteins associated with meat quality and muscle development are still scarce, especially in chicken thigh meat. Hence, the objective of this study was to elucidate the intricate relationship between these traits by liquid chromatography mass spectrometry at three different ages. A total of 341 differential expressed proteins (DEPs) were screened out (fold change ≥ 1.50 or ≤0.67 and < 0.05) among 45 thigh meat samples (15 samples per age) of Beijing-You chicken (BYC), collected at the age of 150, 300, or 450 days (D150, D300, and D450), respectively. Subsequently, based on the protein interaction network and Markov cluster algorithm (MCL) analyses, 91 DEPs were divided into 26 MCL clusters, which were associated with pathways of lipid transporter activity, nutrient reservoir activity, signaling pathways of PPAR and MAPK, focal adhesion, ECM-receptor interaction, the cell cycle, oocyte meiosis, ribosomes, taurine and hypotaurine metabolism, glutathione metabolism, muscle contraction, calcium signaling, nucleic acid binding, and spliceosomes. Overall, our data suggest that the thigh meat of BYC at D450 presents the most desirable nutritional value in the term of free amino acids (FAAs) and intramuscular fat (IMF), and a series of proteins and pathways associated with meat quality and development were identified. These findings also provide comprehensive insight regarding these traits across a wide age spectrum.

Poultry scientists are constantly studying different breeds of cockerels that would be suitable for capon meat production. Capon meat, although not yet very popular, is characterized by exceptional taste qualities that could appeal to many customers. Obtaining the appropriate palatability, structure and tenderness of capon meat is possible thanks to the reduction in androgen levels following the castration of roosters.

This study aimed to discover how using nano artichoke leaf extract Stabilized with zinc Nanoparticles (ZnO-Nano-ALPE) as an alternative to antibiotics and an antioxidant in broiler feed affected their growth, meat quality, and blood. In a completely randomized design experiment, 210 1-day-old chicks (Arbor Acres) were assigned to three trial groups. Each group was subdivided into seven replicates, each with ten unsexed chicks.

This research aimed to enhance the diet of Thai broiler chickens (KKU 1) by assessing the impact of CABR on growth performance, carcass yield, and meat composition. A total of 320 one-day-old mixed-sex (1:1) Thai KKU 1 broiler chicks were randomly assigned to five dietary treatments incorporating CABR at levels of 0%, 3%, 6%, 9%, and 12%. The chicks were fed for a period of 56 days, divided into three phases: 1-21, 22-49, and 50-56 days.

Poultry meat serves as one of the primary protein sources for human consumption. Concurrently, poultry is a significant vector for transmitting foodborne pathogens such as Salmonella to humans. Periodic sampling is imperative for industries and retail outlets to ensure the quality and safety of their products.

The accumulation of heavy metals is closely related to biochemical parameters and the overall health of both animals and humans. Given the high nutritional value of turkey meat, this study aimed to assess the concentrations of toxic and non-toxic heavy metals in the breast, thigh, and liver tissues of turkeys and examine their relationship with oxidative stress biomarkers. In this cross-sectional study, 150 samples of turkey breast, thigh, and liver from Kurdistan province were collected using a cluster random sampling method.
