Organic selenium has been widely studied as a nutritional supplement for animal feed. However, there are few studies on the effect of organic selenium on flesh quality. In this study, the effects of organic selenium (yeast selenium (YS), Se 0.002 mg/L) on the metabolism and protein expression in muscle under temporary fasting condition (6 weeks) were investigated. The muscle structure was observed through a microscope, and regulatory pathways were analyzed using proteomics and metabolomics methods. Electron microscopy showed that YS made the muscle fibers of more closely aligned. Differential analysis identified 523 lipid molecules and 268 proteins. The numbers of upregulated and downregulated proteins were 178 and 90, respectively, including metabolism (46.15%), cytoskeleton (11.24%) and immune oxidative stress (9.47%), etc. Integrated analyses revealed that YS enhanced muscle glycolysis, the tricarboxylic acid cycle and oxidative phosphorylation metabolism. In the YS group, the content of eicosapentaenoic acid was increased, and that of docosahexaenoic acid was decreased. YS slowed down protein degradation by downregulating ubiquitin and ubiquitin ligase expression. These results suggest that organic selenium can improve muscle quality through the aforementioned pathways, which provides potential insights into the improvement of the quality of aquatic products, especially fish.

Selenium (Se) is an essential element for humans, playing a critical role in the functioning of the immune system. The global prevalence of dietary Se deficiency is a significant public health concern, largely attributed to the low levels of Se present in crops. The sufficient Se in plants and humans is determined by the presence of stable Se sources in the soil.

Transition metal sulfides (TMSs) have significant potential in energy storage applications due to their high theoretical capacity and diverse reaction mechanisms. However, performance limitations in supercapacitors arise from various intrinsic defects, including low active material utilization and poor cycling stability caused by unstable electrical conductivity. To address these issues, this paper incorporates selenium atoms into sulfides, aiming to leverage selenium's high conductivity to enhance the electroactivity of transition metal sulfides.

Although more sustainable, feeding fish solely plant protein (PP) deteriorates their fillet quality more than animal counterparts, which additives can alleviate. This study investigated the effects of supplementing high PP diets with two additive mixtures on the fillet quality of rainbow trout (Oncorhynchus mykiss). Fish (∼2.

In this study, 3,4-diaminobenzoic acid (DABA) was introduced into the porphyrin metal-organic framework (PCN-224) for the first time to prepare a ratiometric fluorescent probe (PCN-224-DABA) to quantitatively detect ferric iron (Fe(III)) and selenium (IV) (Se(IV)). The fluorescence attributed to the DABA of PCN-224-DABA at 345 nm can be selectively quenched by Fe(III) and Se(IV), but the fluorescence emission peak attributed to tetrakis (4-carboxyphenyl) porphyrin (TCPP) at 475 nm will not be disturbed. Therefore, the ratio of I/I with an excitation wavelength of 270 nm can be designed to determine Fe(III) and Se(IV).
