Probiotic products that contain lactobacilli have long histories of safe use as Lactobacillus strains have many physiological functions in the gastrointestinal tract (GIT). However, the viability of probiotics can be affected by food processing and the adverse environment. This study investigated the O/W (Oil-in-water emulsions) emulsions formed by coagulation of casein/GA (Gum Arabic) complexes for Lactiplantibacillus plantarum microencapsulation, and the stability of the strains during gastrointestinal environment were also determined. The results showed that the particle size of the emulsion decreased from 9.72 μm to 5.48 μm when the GA concentration increased from 0 to 2 (w/v), and the emulsion particles were found to be more uniform as observed by CLSM (Confocal Laser Scanning Microscope). The surface of this microencapsulated casein/GA composite forms smooth, dense agglomerates and has high viscoelasticity, which effectively improved casein's emulsifying activity (8.66 ± 0.17 m/g). After the casein/GA complexes microencapsulation, a higher viable count was detected after gastrointestinal digestion in vitro, and the activity of L. plantarum is more stable (about 7.51 log CFU/mL) during 35 days of storage at 4 °C. The results of study will help to design lactic acid bacteria encapsulation systems based on the GIT environment for the oral delivery strategy.

The aim of this study is to investigate the impact of using probiotics with strains related to dopamine and gamma-aminobutyric acid production on clinical features of autism spectrum disorder (ASD) and/or attention deficit/hyperactivity disorder (ADHD). This randomized, controlled trial involved 38 children with ADHD and 42 children with ASD, aged 5-16 years, who received probiotics (Lactiplantibacillus plantarum and Levilactobacillus brevis 109/cfu/daily) or placebo for 12 weeks. Parent-reported symptoms were assessed using Conners' 3rd-Ed and the Social Responsiveness Scale Test, 2nd-Ed (SRS-2), and children completed the Conners Continuous Performance Test, 3rd-Ed (CPT 3) or Conners Kiddie CPT, 2nd-Ed (K-CPT 2).

Objectives: The purpose of this study was to find the potential mechanism of two Lactobacillus ( L11 and LR) on ameliorating obesity, including lipid metabolism and gut microbiota. The two isolates have been studied to have good characterization in vitro, but in vivo studies in modulating lipid metabolism and gut microbiota were not studied.
Methods: In this study, mice with HFD supplemented with L11 or LR exhibited slower obesity progression, including reduced weight gain, abdominal fat accumulation, liver damage, inflammation, and adipose lesions.

The effect of SH4, a typical aroma enhancer, on flavor formation of the dry fermented sausage was investigated using gas chromatography-mass spectrometry and metagenomic sequencing. The results showed that inoculation with SH4 promoted volatile compound formation from carbohydrate and amino acid metabolism and accelerated ester synthesis. The enzymes, genes, and microorganisms involved in the formation pathway of volatile compounds based on microbial metabolism were predicted and constructed into a metabolic pathway network.

Background: Ulcerative colitis (UC) is a chronic intestinal disease of growing global concern. Bacteria associated with fermented food or probiotics regulate immune and inflammatory responses, playing a key role in intestinal immune homeostasis.
Results: Five probiotics with relatively good antioxidant effects, namely H6, QC9, E7, D1, and Q13, were screened out from 30 strains of probiotics through in vitro antioxidant assays.

Prebiotics and probiotics have key roles in the intervention and treatment of food allergies. This study assesses the effect of synergistic fructo-oligosaccharide (Lp-FOS) intervention using an allergic mouse model induced by soy protein. The results showed that Lp synergistic FOS significantly decreased clinical allergy scores, inhibited specific antibodies (IgE, IgG, and IgG1), IL-4, IL-6, and IL-17A levels, and increased IFN-γ and IL-10 levels.
