Hydroxycinnamic acids (HCAs) are phenolic compounds produced by the secondary metabolism of edible plants and are the most abundant phenolic acids in our diet. The antimicrobial capacity of HCAs is an important function attributed to these phenolic acids in the defense of plants against microbiological threats, and bacteria have developed diverse mechanisms to counter the antimicrobial stress imposed by these compounds, including their metabolism into different microbial derivatives. The metabolism of HCAs has been intensively studied in spp., as the metabolic transformation of HCAs by these bacteria contributes to the biological activity of these acids in plant and human habitats or to improve the nutritional quality of fermented foods. The main mechanisms known to date used by spp. to metabolize HCAs are enzymatic decarboxylation and/or reduction. Here, recent advances in the knowledge regarding the enzymes that contribute to these two enzymatic conversions, the genes involved, their regulation and the physiological significance to lactobacilli are reviewed and critically discussed.

Blueberries are the most popular small berries, in order to solve the problem of unbalanced blueberry resources in different regions of China. In this study, 18 blueberries were analyzed by chromatography and mass spectrometry for 9 soil elements, 6 anthocyanins, 7 phenolic acids, 9 organic acids, and 12 flavonoids. The result showed that blueberry physico-chemical indicators were significantly variable across production regions by Wenn and volcano maps, chlorogenic acid, ascorbic acid, citric acid, catechin were the main antioxidant active components, soil pH was significantly correlated with low content of anthocyanins and organic acids, soil elements were not significantly correlated with fruits antioxidant activity by the network correlation analysis.

In recent years, the use of cationic peptides as alternative drugs with anticancer activity has received attention. In this study, the targeted release of curcumin (Cur) and CM11 peptide alone and together against hepatocellular carcinoma (HCC) was evaluated using chitosan nanoparticles (CS NPs) coated with Pres1 that target the SB3 antigen of HCC cells (PreS1-Cur-CM11-CS NPs). SB3 protein is the specific antigen of HCC and the PreS1 peptide is a part of the hepatitis B antigen, which can specifically bind to the SB3 protein.

Powdered germinated Thai rice () is widely utilised as a dietary supplement to support health and prevent diseases. This study investigated the bioactive compound profile of water extracts from beverage powder made from Thai germinated brown rice (GBRE) and assessed its anticancer effects on cholangiocarcinoma, lung cancer, and liver cancer cell lines. Proton nuclear magnetic resonance (1H-NMR) revealed 23 metabolites, including amino acids, sugar, phenolic compounds and nitrogenous compounds.
