During fermentation, meat is pre-treated and cured to cultivate a diverse microflora, resulting in fermented meat products with distinctive flavors. Coagulase-negative staphylococcus holds a crucial role in all fermented meat products, contributing to the breakdown of proteins, carbohydrates, and fats, and the creation of flavor compounds. Fermentation technology has important research value and significance in fermented meat products.

To manage the adverse effects of garbage pollution and avoid using chemicals, a natural extract of seafood shells was obtained and explored for its beneficial role. Physical characterization highlighted that its active compounds correspond to chitin and its derivative, chitosan. The ability of the extracted biostimulant to foster tomato tolerance was tested on drought-stressed plants.

The global environmental issues require that we redesign food systems. Transitioning towards more plant-based diets is crucial, but there is a gap observed between consumers' intention and behaviour.
