This experiment evaluated the effects of bovine appeasing substance (BAS) administration at feedlot entry on growth, temperament, inflammation, response to vaccination, behavior, carcass characteristics, and meat quality of beef heifers. Thirty heifers were weaned and assigned to (d 0): (1) BAS (n = 15; SecureCattle; IRSEA Group) or (2) Saline (n = 15). On d 0, heifers were also vaccinated against respiratory diseases and slaughtered on d 150.

This research aimed to explore the changes in two sampling locations (internal and external) of the Longissimus thoracis et lumborum (LTL) beef muscle proteomes subjected to ultraviolet light before dry-aging. It further compared the biological processes and associated proteins at interplay at the external locations of UV pre-treated and control dry-aged samples. Before dry-aging, proteins related to external stimuli were differentially abundant between both locations possibly due to the early post-mortem energy metabolism attempting to compensate for energy deficiencies and stress derived from slaughter and processing.

We hypothesized that transportation might impact beef sensory quality, particularly as the distance between farms and the slaughterhouse increases. Specifically, we expected that pre-slaughter transport over longer distances would induce stress in the cattle, resulting in elevated ultimate pH and, consequently, reduced beef quality. Thus, this study aimed to specifically study the effects of transport in commercial conditions of Limousin cows from farms located in different areas of France to slaughter on ultimate pH (pHu) measured in the muscle (LT), marbling (two major factors affecting eating quality) and the MSA Index (a global indicator of potential eating quality at the carcass level).

Newborn goat kids exposed to environmental stress are susceptible to diarrhea due to immature intestinal functions and undeveloped gut microbiota. Butyrate-producing bacteria as next generation probiotics benefit the maintenance of intestinal health, but the mode of regulation is still unclear.
