rhizome (KGR) is a stemless, sweet-smelling, enduring, and rhizomatous monocotyledonous plant of the ginger family also called sand ginger or kencur. lt possesses many pharmacological effects and the goal of this study is to use several solvent solutions to determine the antioxidant and anti-diabetic potential of KGR. By observing KGR's alpha-glucosidase and alpha-amylase inhibitory activity, the diabetic activity was assessed. The cancer preventive action was evaluated by doing the 2,2-diphenyl-1-picrylhydrazyl test. The outcomes of the study showed increase in dose-dependent percentage of inhibition in α-amylase and α-glucosidase activity for both extract and standard ranging from 100 to 500 μg/ml. The current review proposes that the concentrate of KGR could be utilized for the treatment of diabetes mellitus as well with respect to dealing with the oxidative stress-related diseases.

Drying plant raw materials using modern techniques or combined methods is currently one of the main trends in food technology, which combines process optimization in line with the principles of sustainable development while maintaining high product quality. Therefore, this study aims to be innovative, assessing the possibility of using sublimation techniques, convective drying (CD) at different temperatures (50 °C, 60 °C, 70 °C), vaccum microwave drying (VMD) at different power levels (120 W, 240 W, 360 W, and 360/120 W), and combining these two techniques- CD-VMD (50 °C/120 W, 60 °C/120 W, 70 °C/120 W) in the production of peach snacks. The qualitative analysis of the tested dried peaches showed that the content of polyphenols was dominated by polymers of procyanidins (82.

We investigated the anti-diabetic effects of the ethyl acetate fraction of and its isolated compounds using both and study models. tests showed that the ethyl acetate part of and its separate compounds had better activity blocking α-glucosidase, α-amylase, and α-lipase. The ethyl acetate fraction and its active constituents, barbaloin and gallic acid, significantly ( < 0.
