In this study, chitosan (C)-polyvinyl alcohol (P) edible film containing bio-fabricated nanosilver particles (nAg) (as antimicrobial agent) and beetroot peel extract (BRPE) (as antioxidant agent and pH indicator) was used as spoilage indicator in cold-stored rainbow trout fillets. DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity (43.02%), reducing power (2.

The transition towards more sustainable packaging calls for improving our ability to predict, control, and inhibit microbial growth. Despite the importance of modified atmosphere packaging (MAP) in food preservation, the exact relations between MAP gases (CO, O, N) and microbial behavior are still poorly understood. Addressing this major knowledge gap requires a specific infrastructure to gain precise control over the gas composition during storage time.

The purpose of the present research was to prepare a novel biodegradable coating of whey protein (whey) and essential oil of (forms of free (EO) and Pickering emulsion (NEO)) to improve the shelf life of beef. In this study, various microbiological, chemical, and sensory analyses were performed. The results showed that after 18 days, the highest and lowest microbiological counts were related to control samples and whey-NEO treatments, respectively.

The objective of the current research was to evaluate the effects of incorporating kappa-carrageenan (KCA) coating with dill essential oil (DEO), in conjunction with oxygen absorber (OA) packaging, on the quality attributes of rainbow trout fillets throughout a 20-day period of refrigerated storage. The administered treatments included OA, KCA + OA, KCA + DEO, KCA + DEO + OA, and control. Treating the trout fillets with DEO-loaded coating and/or using OA packaging was found to be more effective in restricting the growth of total mesophilic and psychrotrophic bacteria, Enterobacteriaceae, and lactic acid bacteria.
