Introduction: The free exopolysaccharide (f-EPS) produced by is a natural texture modifier and has a variety of prebiotic activities. Our previous studies showed f-EPS production from 937 was increased 2-fold in the presence of 15 mM of glutamate, isoleucine, and histidine in the chemically defined medium.
Methods: In this study, we used transcriptomics and qPCR to further explore the specific mechanism of the enhanced effect of 3 amino acids on the f-EPS biosynthesis of 937.

With climate change, the frequency of regions experiencing water scarcity is increasing annually, posing a significant challenge to crop yield. Barley, a staple crop consumed and cultivated globally, is particularly susceptible to the detrimental effects of drought stress, leading to reduced yield production. Water scarcity adversely affects multiple aspects of barley growth, including seed germination, biomass production, shoot and root characteristics, water and osmotic status, photosynthesis, and induces oxidative stress, resulting in considerable losses in grain yield and its components.

Traditional Turkish fermented foods like boza, pickles, and tarhana are recognized for their nutritional and health benefits, yet the probiotic potential of lactic acid bacteria (LAB) strains isolated from them remains underexplored. Sixty-six LAB strains were isolated from fermented foods using bacterial morphology, Gram staining, and catalase activity. The isolates were differentiated at strain level by RAPD-PCR (Random Amplification of Polymorphic DNA-Polymerase Chain Reaction) and twenty-five strains were selected for further evaluation of acid and bile salt tolerance.
