This chapter reviews the uses of processed fungal cells as protein-rich foods in substitution to meat. Yeasts, mushrooms, and filamentous fungi have long been part of the human diet, improving the nutritional quality and taste of different foods. Recently, because of the populational growth and environmental impact caused by animal farming, the use of animal-derived protein has been raising concerns in public and scientific debates. Fungal biomass represents a nutritious, safe meat alternative that can help society in the reduction of greenhouse gases emissions and improve public health. Additionally, it provides all essential amino acids and has an interesting fatty acid profile. Current research is involved in finding new strains with improved efficiency, the investigation of new substrates (especially agro-industrial wastes) to reduce the environmental impact, and the development of new formulations to use mycoprotein in different dishes.

The tick fauna of El Salvador is currently represented by 10 species of hard ticks (family Ixodidae) and 2 species of soft ticks (family Argasidae). This study aimed to report new and additional records of ticks and rickettsiae in El Salvador. During 2019-2021, a total of 216 specimens of ticks were collected from eight host species (domestic and wild animals) and in the environment among 15 geographic localities of El Salvador.

The widespread use of pesticides, including diazinon, poses an increased risk of environmental pollution and detrimental effects on biodiversity, food security, and water resources. In this study, we investigated the impact of Potentially Toxic Elements (PTE) including Zn, Cd, V, and Mn on the degradation of diazinon in three different soils. We investigated the capability and performance of four machine learning models to predict residual pesticide concentration, including adaptive neuro-fuzzy inference system (ANFIS), support vector regression (SVR), radial basis function (RBF), and multi-layer perceptron (MLP).
