Background: Neuroimaging studies have shown a complex pattern of brain activation during perception of a pleasant odor and during its olfactory imagery. To date, little is known regarding changes in motor cortex excitability during these tasks. Bergamot essential oil (BEO) is extensively used in perfumes and cosmetics for its pleasantness. Therefore, to further our understanding of the human sense of smell, this study aimed to investigate the effect of perception and imagery of a pleasant odor (BEO) on motor cortex using Transcranial magnetic stimulation (TMS).

Materials And Methods: We examined the primary motor cortex (M1) excitability during perception of a pleasant odor (BEO) or perception of odorless saline (experiment 1). Furthermore, we tested the effect of olfactory imagery (OI) of BEO on corticospinal excitability (experiment 2). The increase in motor evoked potential (MEP) amplitude was correlated with personality dimensions scores, pleasantness, vividness, and general imagery ability.

Results: The results indicate that the corticospinal excitability changed after both perception and imagery of a pleasant odor (BEO). The correlation analysis shows an association with neuroticism personality trait (experiment 1) and with general olfactory imagery ability (experiment 2).

Conclusion: Both perception of a pleasant odor and its olfactory imagery modulate motor cortex excitability. The enhanced brain activation is affected by specific individual characteristics. Overall, our findings provide physiological evidence for a complex interaction between the olfactory and motor systems.

Background: Anhedonia, including social, physical, and less-known, olfactory, stands as a core symptom of major depressive disorder (MDD). At the neurobiological level, anhedonia has been associated with abnormal activity within the reward system, suggesting a key role for dopamine. Repetitive Transcranial Magnetic Stimulation (rTMS) has emerged as an innovative treatment for alleviating depressive symptoms.

Article Synopsis
  • Two varieties of mango juices were fermented with 40 strains of Lactiplantibacillus plantarum, leading to the analysis of volatile compounds and sensory characteristics through advanced testing methods.
  • Most strains showed good growth during fermentation, with SS6 and B15 producing the most acid in the ReNong and Ketti mango juices, while 75 volatile compounds were identified, highlighting strain-specific differences.
  • The fermentation process increased the complexity of aroma profiles, particularly enhancing 'mango' and 'floral' scents through esters, with C10 and LA100 providing the most pleasant flavors, offering insights for future mango juice quality control and strain selection.

Humanity has long battled mosquitoes and the diseases they transmit-a struggle intensified by climate change and globalization, which have expanded mosquito ranges and the spread of associated diseases. Additionally, widespread insecticide resistance has reduced the efficacy of current control methods, necessitating new solutions. Nootkatone, a natural compound found in grapefruit, shows promise as both a mosquito repellent and an insecticide.

Article Synopsis
  • - The study shows that lactic acid fermentation significantly enhances the flavor of egg whites, primarily through the action of Streptococcus thermophilus, one of the lactic acid bacteria tested.
  • - Researchers used advanced techniques like gas chromatography-mass spectrometry to analyze the metabolic changes, which revealed that amino acid breakdown is key to producing aromatic compounds that improve flavor.
  • - The findings underscore the role of specific enzymes in protein breakdown and amino acid synthesis, offering a foundation for future research on manipulating egg white flavor.
