In this study, a three-dimensional adsorbent was developed based on graphene oxide/AgO nanoparticles over interconnected nickel foam (GO/AgO@Ni foam) for rapid and efficient vortex assisted floating solid phase extraction of bisphenol A in canned food products prior to high performance liquid chromatography with a fluorescence detector. The analytical techniques scanning electron microscopy (SEM), energy dispersive X-ray spectroscopy (EDX) and Fourier transform infrared (FT-IR) were used for characterization of the synthetized GO/AgO@Ni foam. The effect of proficiency factors including pH, foam size, vortexing time, salt addition, sample volume, desorption type and volume, and desorption time on the extraction efficiency of bisphenol A were explored through the matrix match method. Under the above experimental conditions, the figures of merit of the method were acquired as LODs (S/N = 3) of 0.18-0.84 μg kg, LOQs of 0.61-2.81 μg kg (S/N = 10), linear ranges of 0.5-500 μg kg, and enrichment factors of 235.5-244.9. The inter-day precision values (RSD%, = 7) of 2.5-3.6 and the intra-day precision (%) of (5 days and seven replicates for each day) 2.8-3.8 were achieved for bisphenol A at a concentration of 50 μg kg. The relative recoveries of 94.0% to 99.6% were obtained for the canned food samples.

Glycation-mediated pea protein isolate-curcumin conjugates for uniform walnut oil dispersion: enhancing oxidative stability and shelf life.

J Sci Food Agric

January 2025

SKL of Marine Food Processing & Safety Control, National Engineering Research Center of Seafood, Collaborative Innovation Center of Seafood Deep Processing, Liaoning Province Key Laboratory for Marine Food Science and Technology, School of Food Science and Technology, Dalian Polytechnic University, Dalian, China.

Background: Traditional methods for fabricating protein-polyphenol conjugates have not preserved the structural and functional integrity essential for the food industry effectively. This research introduces an advanced encapsulation methodology designed to overcome these limitations, with the potential to enhance the stability of edible oil matrices significantly, leading to improved preservation techniques and extended shelf life.

Results: Glycated pea protein isolate-curcumin conjugates (gPPI-CUR) were developed, demonstrating a marked improvement in the oxidative stability of walnut oil (WO), a proxy for edible oil matrices.

Blanching-Induced Changes in Polyphenol Oxidase, Antioxidants and Phenolic Profile of Mangosteen Pericarp.

Food Technol Biotechnol

December 2024

Department of Food Technology, Faculty of Food Science and Technology, Jalan Universiti 1, 43400, Universiti Putra Malaysia, Selangor, Malaysia.

Research Background: Anthocyanin pigments in mangosteen pericarp can serve as natural colourants; however, their stability is compromised by enzymatic browning caused by polyphenol oxidase (PPO). Thus, this study aims to investigate how hot water and steam blanching affect the PPO activity, phenolic profile and antioxidant properties of mangosteen pericarp.

Experimental Approach: Fresh mangosteen pericarp was blanched in hot water or steam at 100 °C for 0, 30, 60, 90 and 120 s and the residual PPO activity, total phenolic content (TPC), total anthocyanins, antioxidant activity, browning index and colour properties were evaluated.

The historical appreciation of tea dates back to ancient times, while technological limitations have long hindered in-depth exploration of its flavor complexity and functional attributes. This study investigated the effects of various teas on a traditional delicacy, "tea-flavored fish", using teas processed via traditional methods. Analysis of functional components revealed that processing and fermentation reduced catechin levels (186.

This study compared the antimicrobial activity of several essential oils (EOs) vapor against food spoilage microbiota and further investigated the potential of EO vapor in extending the shelf life of leafy green vegetables. Oregano EO vapor showed stronger antimicrobial activities than basil and clove EO vapors against common spoilage-causing microorganisms in fresh produce, including Pantoea agglomerans, Pseudomonas cichorii, Pectobacterium carotovorum, Pantoea ananatis, Pseudomonas marginalis, Alterneria bassicicola, and Botrytis cinerea. When oregano EO vapor was applied to leafy greens, phytotoxic effects were observed on butter lettuce and iceberg lettuce but not on kai lan and kale.

Program temperature-controlled drying: An effective way to improve the quality of hot-air dried shiitake mushrooms.

J Food Sci

January 2025

Key Laboratory of Agro-food Quality and Safety of Ministry of Agriculture and Rural Affairs, Institute of Agricultural Quality Standard and Testing Technology, Chinese Academy of Agricultural Sciences, Beijing, China.

This study applied program temperature-controlled drying (PTCD) to optimize the hot-air drying process for shiitake mushrooms, adjusting the drying temperature based on activity changes of γ-glutamyl transpeptidase (γ-GTase) and cysteine sulfoxide lyase (C-S lyase). Compared with constant temperature drying, PTCD (ST_75 and ST_150) significantly enhanced the umami and aroma profiles and sulfur compounds, increasing the levels of key flavor compounds such as glutamic acid and 5'-GMP. Moreover, PTCD improved rehydration capacity (515.
