Although the starch digestibility of cooked white rice has been investigated with regard to its relation to starch structure, it is not yet clear how starch molecular structure and water content affect its digestion rate. To investigate this, the in vitro starch digestibility and molecular structure of 10 rice varieties with a range of rice-to-water cooking ratios were investigated. As expected, starch digestibility varied with different conditions. Typically, a higher amylose content resulted in a lower maximum digestion extent for a given water content. Having relatively more and longer amylopectin intermediate chains caused a slower starch digestion rate, but only with rice-to-water ratios between 1:1 and 1:1.2. These results could prove useful to find combinations of starch fine molecular structures and water contents to produce cooked rice with low glycemic index.

Background: Gastrointestinal diseases in weaned piglets are a frequent cause of high morbidity and mortality in domestic pigs. The use of antibiotics is problematic due to increasing antibiotic resistance in bacterial populations, for which reason the use of suitable probiotics is highly recommended to maintain animal health and welfare.
Results: In this study, 57 strains of biologically safe lactic acid bacteria (LAB) and bifidobacteria originating from the gastrointestinal tract (GIT) of pigs were identified and characterized in terms of their probiotic properties for potential use in weaned piglets.

With the growing attention on green starch modification technologies, this study investigates the regulatory effects of alternating magnetic field treatment on the fine structure and functional properties of pregelatinized cassava starch at different treatment times (10 min, 30 min, 50 min).The results demonstrate that magnetic field treatment not only increased starch cracks and compactness but also promoted molecular chain breakage and reorganization, hydrogen bond formation, and starch recrystallization, thereby enhancing molecular order. Moreover, the treated starch exhibited improved solubility and swelling power, alongside a positive impact on the content of slowly digestible starch.
