The organic food industry in China has been developing fast with the increasing consumer demand for healthier, safer, and more nutritious foods since the epidemic outbreak. It is of great significance to understand the psychological preference of consumers for organic food and adjust the marketing strategy accordingly. In this study, we adopted the multi-group structural equation model (SEM) to analyze 571 questionnaire data and explored the effects of consumers' perception on the sensory appeal of organic food, perception on promotional stimulation, positive emotion, and perceived social value on the purchase intention of organic food. Based on the Stimulus-Organism-Response (S-O-R) model, this study divides the route affecting organic consumption behavior into the rational route and emotional route. It was proved that the emotional route (positive emotion) has a greater impact on the purchase intention of organic food than the rational route (perceived social value). In addition, there are different purchase intentions among different product types. Specifically, compared with organic tea, positive emotion has a greater effect on the purchase intention for organic rice. This study provides an important reference for the organic food-marketing strategy of enterprises.

Sourdough bread consumption has been associated with improved glucose and appetite regulation thanks to the presence of organic acids produced during fermentation of the flour-water mixture. We investigated the effects of whole meal sourdough bread (WSB) rich in lactic acid on energy intake, satiety, gastric emptying, glucose, and C-peptide response compared to whole meal yeast bread (WYB). Forty-four normal-weight participants (age: 30 ± 10 y; BMI: 23 ± 2 kg/m) participated in this double-blind, randomized cross-over trial, consisting of two study visits separated by one week.

Poly- and perfluoroalkyl substances (PFASs) are a large class of fluorinated chemicals used in various industrial and agrochemical products such as fluorinated benzoylurea (FBU) pesticides. Initiated from an incidental and preliminary finding of three high-abundance FBUs in fish, this study implemented nontarget analysis and characterization for FBUs together with their analogues and transformation products (TPs) in fish using liquid chromatography, high-resolution mass spectrometry, and chemical species-specific algorithms. A total of 23 FBU-relevant compounds were found and tentatively/accurately elucidated with structures, including 18 PFASs and 5 non-PFAS compounds, of which 4 were original FBUs, 8 were FBU analogues, and 11 were FBU-TPs.

Dryland grazing sustains millions of people worldwide but, when poorly managed, threatens food security. Here we combine livestock and wild herbivore dung mass data from surveys at 760 dryland sites worldwide, representing independent measurements of herbivory, to generate high-resolution maps. We show that livestock and wild herbivore grazing is globally disconnected, and identify hotspots of herbivore activity across Africa, the Eurasian grasslands, India, Australia and the United States.

Rare earth elements (REEs) are a critical global focus due to their increasing use, raising concerns about their environmental distribution and human exposure, both vital to food safety and human health. Surface soil (0-30 cm) and corresponding rice grain samples (n = 85) were collected from paddy fields in Taiwan. This study investigated the total REE contents in soil through aqua regia digestion, as well as their labile forms extracted using 0.

This study aims to investigate the physiological changes in growth and metabolic response mechanisms of highland barley under different concentrations of cadmium. To achieve this, cadmium stress was applied to green barley at levels of 20, 40, and 80 mg/L. The results revealed that, under Cd(II) stress, the chlorophyll content and photosynthesis in leaves of highland barley seedlings were inhibited to some extent.
