Apoptosis serves as the initial phase in the conversion of muscle to meat, driving key biochemical and morphological changes in the postmortem muscle. To effectively improve and control meat quality across different animal species, it is important to gather more information on the mechanisms by which apoptotic potential, mediated through the interaction of apoptosis-related molecules, influences meat quality variations. The apoptotic potential, determined by the balance between apoptotic and anti-apoptotic molecules, such as Ca, cytochrome , caspases, and heat shock proteins, varies among different species.

The objective of this study was to substitute partially fat with pea protein isolate (PP)/rutin (Ru) complexes to produce a healthy and stable low-fat whipped cream. To strengthen starch gel quality and improve the deterioration from freeze-thaw cycles, corn starch/whey protein isolate (WPI)/caffeic acid (CA) composite gels were rationally constructed in this study. The results showed that the introduction of WPI and CA significantly optimized the microstructure of the gels, an observation verified by SEM and CLSM. In addition, FT-IR and XRD analyses further revealed that the interaction mechanism within the composite gel was mainly due to the reinforcement of hydrogen bonds.
