The objective of this study was to develop novel colorimetric films for food freshness monitoring. UV light irradiation (365 nm) and carbon dots (CDs) were tested as the potential crosslinkers in the fabrication of anthocyanins doped fish gelatin (FG) films. The effect of crosslinkers on the optical, surface, structural, barrier and mechanical properties of FG films was investigated. The incorporation of CDs under UV irradiation improved the tested properties of FG films. The kinetic colorimetric responses of FG films against ammonia vapor were studied to simulate the food spoilage and determine the ammonia sensitivity of the films. Among the tested films, UV-treated FG films containing 100 mg/l (FG-UV-CD100) indicated the best properties. Later, the color difference of FG-UV-CD100 films was observed to correlate well with microbial growth and TVB-N release in skinless chicken breast samples. At the same time, a custom-designed smartphone application (SmartFood) was developed to be used with the FG-UV-CD100 film for quantitative estimation of food freshness in real-time. The proposed food freshness monitoring platform reveals a great potential to minimize global food waste and the outbreak of foodborne illness.

Multifunctional pH-responsive films were fabricated via layer-by-layer deposition of gelatin, chitosan, and carboxymethyl cellulose (CMC), incorporating selenium nanoparticles (SeNPs) and beetroot extract (BTE), to monitor and preserve beef freshness. SeNPs were synthesized and characterized via various techniques. Hydrogel indicators promise to monitor food spoilage, but their poor mechanics can cause defects in transport. Herein, a novel zwitterionic double network (DN) hydrogel was developed by polymerizing arylamide and sulfobetaine methacrylate in an alginate-Ca system. This hydrogel exhibited enhanced mechanical properties, including a maximum 2087 % breaking elongation and 135 ± 12 kJ/m toughness, significantly outperforming the current zwitterionic DN hydrogels, which typically exhibit less than 1800 % breaking elongation, capable of supporting 150 g-136 times its own weight.

Raw pork is prone to oxidation and rancidity as it contains a high level of unsaturated lipid molecules. Reliable biomarkers to benchmark pork freshness and their formation have not been systematically investigated. The results indicated that the peroxide values, TVB-N and rancid volatiles dramatically increased in pork during the storage period (4 °C, 0-9 d).

In order to study the pattern of changes in quality of marinated Chinese mitten crabs (Eriocheir sinensis) during cold storage, three aspects of sensory, taste and odor were investigated. Sensory evaluation and total volatile basic nitrogen (TVB-N) were measured in viscera and abdomen muscle at 0, 7, 15 and 30 days of storage at 4°C. Sensory scores significantly declined at 15 d, coinciding with TVB-N levels exceeding 25 mg N/100 g.

Most photosensitizers have limited responsiveness to visible light, however, visible light is a light source with a wide range of wavelengths and the most common in daily life, and making full use of visible light can help to enhance the photodynamic antimicrobial properties of photosensitizers. To tackle this issue, this study confirmed that alizarin has a good absorption capacity for visible light by UV-DRS analysis.
