The heterocyclic compounds 2,6-dimethyl-4-propyl-1,3-oxathiane and 2,4-dimethyl-6-propyl-1,3-oxathiane were obtained by condensing 4-mercapto-2-heptanol and 2-mercapto-4-heptanol, respectively, with acetaldehyde. For both, separation of the eight stereoisomers was achieved capillary gas chromatography using heptakis(diethyl--butyldimethylsilyl)-β-cyclodextrin as the chiral stationary phase. Their configurations were assigned by combinations of enzyme-catalyzed kinetic resolutions, HPLC separations, and assessments of NMR data. The odor thresholds and odor qualities of the stereoisomers were determined by capillary gas chromatography/olfactometry. The odor thresholds of the stereoisomers of were generally higher than those of . For both oxathianes, the stereoisomers in which all substituents are in equatorial positions showed the highest odor thresholds. Most of the stereoisomers of exhibited pleasant flowery, fruity, or sweet nuances; the stereoisomers of were mainly characterized by descriptors, such as broth, mushroom, or pungent. The data demonstrate the impact of the positions of substituents and their spatial orientations on the sensory properties of 1,3-oxathianes.

Target odorant detection in mixtures has been shown to become more difficult as the number of background odorants increases and falls below chance level in mixtures with 16 components. Our aim was to investigate target odorant detection in mixtures among healthy people and compare it between dysosmic patients and age- and gender-matched controls. Participants underwent extensive olfactory testing and performed two target odorant detection tasks.

Moderate preoxidation is feasible for odor-producing algae treatments, usually requiring trade-offs in algal removal and integrity maintenance. However, dosing oxidants may cause internal oxidative homeostasis imbalances and secondary odorous metabolite responses, adding new trade-offs for moderate treatments. Peracetic acid (PAA)/Fe processes are promising strategies in moderate treatments and thus were applied to examine how to achieve the following three trade-offs: good algal removal, no odorant increases and no releases.

The study investigated the perceptual interaction between two types of Rose damascena essential oil and two types of Angelica dahurica root essential oil. Using gas chromatography-olfactometer (GC-O) and gas chromatography-mass spectrometer (GC-MS), 24 and 25 aromatic compounds in Rose damascena essential oil and Angelica dahurica root essential oil were identified and quantified, respectively. Based on flavor dilution (FD) values and odor activity values (OAVs), 10 important aroma compounds in Rose damascena essential oil and 6 in Angelica dahurica root essential oil were identified.

Characterization of Odor-Active 2-Ethyldimethyl-1,3,6-trioxocane Isomers in Polyurethane Materials.

Polymers (Basel)

Department of Chemistry, TUM School of Natural Sciences, Technical University of Munich, Lichtenbergstraße 4, 85748 Garching, Germany.

Polyurethane materials, widely used in indoor environments, occasionally exhibit unpleasant odors. An important source of polyurethane odorants is polyether polyols. Previous studies identified odorous 2-ethyldimethyl-1,3,6-trioxocanes in polyurethane materials and polyols but did not investigate the odor activity of the individual isomers.

Baijiu aged in Jiuhai container will produce a special Jiuhai-aroma, which has not been fully studied. In this study, check-all-that-apply method and quantitative descriptive analysis were used to characterize Jiuhai-aroma, and it was found that the aroma characteristics of herbs, spicy, cut hay and woody were prominent in Baijiu aged in Jiuhai container. According to the results of GC-O and quantification, 71 odorants were identified in Jiuhai sample.
