Dopamine (DA) is an important neurotransmitter in the brain of mammals. There is a critical need for fast and sensitive determination approaches to monitor these potential diseases due to various weaknesses in clinical trials of the existing methods for DA detection. DA can effectively quench the fluorescence of carbon quantum dots (CDs) through the inner filter effect and static quenching. In this work, fluorescent yeast CDs (Y-CDs) were prepared a simple hydrothermal approach of using yeast powder and regarded as the fluorescent nanoprobe to directly monitor the DA concentration. The as-prepared detection platform exhibited excellent sensitivity and selectivity toward DA with a low detection limit of 30 nM and a wide linear range of 0.05-150 μM. Benefiting from these outstanding features, the developed label-free method has been successfully applied for fast DA detection in human serum samples with satisfactory recoveries. Furthermore, it demonstrated that the Y-CDs were well suitable for live cell imaging and showed low toxicity toward MCF-7 cells. Consequently, this work will facilitate the great potential of the versatile Y-CDs in developing biosensors for clinical diagnosis and other biological applications.

strain PJH16, isolated and tested by our team, suppresses cucumber wilt as an efficient biocontrol agent. For further investigation, the strain has been combined with two other ( VJH504 and JNF2) to enhance biocontrol ability, which formed high-efficiency microbial agents in the current study. The methodological target taken is based on achieving the optimal growth conditions of the combined microbial agents; hence, the medium composition and culture conditions were optimized through a single-factor test, orthogonal test and response surface methodology.

Fermentable oligo-, di-, and monosaccharides as well as polyols (FODMAPs) came into focus following recent clinical studies confirming that they worsen the symptoms of several gastrointestinal disorders suffered by 40% of the general population. Currently; only the low-FODMAP diet is a valuable strategy to help relieve IBS symptoms; however; it is only a temporary solution due to the nutritional deficiency caused by avoiding high-FODMAP foods. At the same time; bakery products are an important part of the human diet worldwide and the key contributors to the high intake of FODMAPs; especially in their wholegrain form.

Cacao mucilage is typically disposed of during processing, yet its abundant content of organic compounds, polysaccharides, and nutrients renders it valuable for various applications. This scientific study investigates the suitability of cacao mucilage as an alternative culture medium for , , and , aiming to provide a viable alternative to traditional media. Through a mixed-design approach, the powdered mucilage, peptone, and yeast extract ingredients were optimized using the recovery rates of each micro-organism as the response variable.

American elderberry juice (EBJ) and fermented elderberry juice (EBF) were spray dried using two different carriers: S. cerevisiae yeast (SC), used for juice fermentation and as encapsulating agent, and pea protein, to produce protein-polyphenol ingredients. The spray drying (SD) performance (solids recovery, SR; phenolic retention, PR) and quality attributes (physicochemical and functional properties, phytochemical content and bioaccessibility after in vitro digestion) of eight treatments of spray dried elderberry particles were determined.

Fungal infections caused by yeast have increased in recent decades, becoming a major threat to public health. Antifungal therapy represents a challenging problem because, in addition to presenting many side effects, fungal resistance has been increasing in recent years. As a result, the search for new therapeutic agents has advanced with the use of new technologies such as nanoparticles (NPs).
