pomace accounts for 20% of the fruit's weight that is not utilized when it is juiced. The pomace contains bioactive phenolic substances such as anthocyanins and flavonoids. To improve the utilization value of pomace, an optimized extraction method for the residual polyphenols was developed using response surface methodology (RSM). The resulting extract was analyzed by high performance liquid chromatography (HPLC), and the in vitro hypoglycemic activity and antioxidant activity of the polyphenolic compounds obtained were also investigated. The optimum extraction conditions (yielding 24.37 mg·g total polyphenols content) were: extraction temperature 60 °C, ultrasonic power 270 W, ethanol concentration 53%, extraction time 57 min, and solid to liquid ratio 1:34. Four polyphenolic compounds were identified in the pomace extract by HPLC: myricitrin, cyanidin--glucoside, hyperoside, and quercitrin. DPPH and hydroxyl radical scavenging tests showed that the polyphenols extract had strong antioxidant abilities. It is evident that the residual polyphenols present in pomace have strong hypoglycemic activity and the juiced fruits can be further exploited for medicinal purposes.

A total of 116 New Zealand Pinot Noir wines from Central Otago (CO), Marlborough (MLB), and Martinborough (MTB) were analysed for colour, monomeric and total phenolics, antioxidant capacity, and tannins using colourimetric and HPLC methods. Correlations among chemical compositions and analytical techniques were examined. Additionally, a sensory study assessed wine colour and five mouthfeel attributes.

Article Synopsis
  • - The text discusses challenges in delivering antifibrotic drugs to the liver due to physical barriers and clearance mechanisms, prompting the development of a new delivery strategy aimed at treating liver fibrosis.
  • - This strategy involves a combination of a drug generator called Pro-HAase, which is injected, and an oral iron chelator named deferasirox (DFX), creating a targeted release of antifibrotic agents specifically in the fibrotic liver.
  • - The approach effectively reverses liver fibrosis while minimizing toxicity related to residual iron, showcasing a sophisticated method for overcoming drug delivery barriers in liver treatment, potentially guiding future designs for similar nanomaterial systems.

Article Synopsis
  • The study compared the effects of radio frequency (RF) blanching and hot water blanching on polyphenol oxidase (PPO) activity in iron yams, finding that RF blanching was more effective at reducing PPO activity.
  • RF heating resulted in less cellular damage, preserving the color and texture of yams better than hot water blanching, even at similar levels of enzyme inactivation.
  • The research suggests that RF blanching has significant potential for development in the food industry due to its efficient heating and less damaging effects on the food's structure.

Powdered samples of guava pulp and processing by-products (single fraction containing crushed seeds, peels, and residual pulp) are rich sources of polyphenols with antidiabetic, anti-obesity, cardioprotective, and anticancer potential. However, post-digestion retention of these bioactivities remains unclear. Therefore, these samples were subjected to in vitro digestion simulating oral, gastric, small intestine, and large intestine phases.
