Unlabelled: Experiments were carried out with the objective of enhancing shelf life and maintain quality of fresh-cut radish slices during storage at 8 °C. Dip treatment of radish slices in 20 g/L glucose solution for five minutes retained the quality attributes viz., surface colour, sensory properties and antioxidant capacity of the slices till six days of storage. Isothiocyanates were also retained better due to glucose dip. Biplot generated through principal component analysis of head space volatiles from fresh and stored radish slices showed that fresh and glucose treated slices grouped together with 4-methyl thio-3-butenyl isothiocyanate. Accumulation of sulphurous volatiles such as methyl disulphide, dimethyl trisulphide, 2-pentanethiol was observed in control (undipped) radish slices, indicating their probable role as spoilage indicator volatiles. Thus, glucose pre-treatment can be considered as a practical method for quality retention of fresh-cut radish.

Direct Three-Dimensional Mass Spectrometry Imaging with Laser Ablation Remote Atmospheric Pressure Photoionization/Chemical Ionization.

Department of Inorganic and Analytical Chemistry, Faculty of Chemistry, Rzeszów University of Technology, 6 Powstan ́ców Warszawy Ave., Rzeszów 35-959. Poland.

The laser ablation remote atmospheric pressure photoionization/chemical ionization (LARAPPI/CI) platform coupled to an ultrahigh resolution quadrupole-time-of-flight (QToF) mass spectrometer was developed and employed for the first direct three-dimensional (3D) mass spectrometry imaging (MSI) of metabolites in human and plant tissues. Our solution for 3D MSI does not require sample modification or cutting into thin slices. Ablation characteristics of an optical system based on a diffraction optical element are studied and used for voxel stacking to directly remove layers of tissues.

Effect of dense phase carbon dioxide treatment on the flavor, texture, and quality changes in new-paocai.

Article Synopsis
  • This study explored how dense phase carbon dioxide (DPCD) treatment affects the taste and properties of a traditional pickled dish called new-paocai.
  • The optimal treatment conditions were found to be 25 MPa, 40 °C for 40 minutes, which did not significantly alter important chemical properties like pH or total acid levels.
  • Results showed that DPCD effectively reduced certain volatile flavors in the brine, and an electronic nose was used to identify flavor differences, suggesting this technology could enhance pickle production methods.

Enhancing the drying rate and dried products quality, as well as energy efficiency, is very tempting for the drying industry. Recently, a lot of investigations have illustrated that the drying temperature, air velocity, and sample thickness have significant influences on the drying process. However, few investigations took into account the relative humidity (RH) as an important hot-air-drying parameter in the drying process.
