Pasta made from durum wheat is a widely consumed worldwide and is a healthy and convenient food. In the last two decades, there has been much research effort into improving the nutritional value of pasta by inclusion of nonconventional ingredients due to the demand by health-conscious consumers for functional foods. These ingredients can affect the technological properties of the pasta, but their health impacts are not always measured rather inferred. This review provides an overview of pasta made from durum wheat where the semolina is substituted in part with a range of ingredients (barley fractions, dietary fibre sources, fish ingredients, herbs, inulin, resistant starches, legumes, vegetables and protein extracts). Impacts on pasta technological properties and in vitro measures of phytonutrient enhancement or changes to starch digestion are included. Emphasis is on the literature that provides clinical or animal trial data on the health benefits of the functional pasta.

Pasta: Is It an Unhealthy Refined Food?

J Nutr

December 2024

Department of Clinical Medicine and Surgery, Federico II University, Naples, Italy.

Article Synopsis
  • - Pasta has a low glycemic index and is a key component of the Mediterranean diet, providing dietary fiber because it's made from durum wheat semolina, which retains its structural integrity.
  • - Although typically classed as a refined carbohydrate and part of "unhealthy plant-based diets", pasta has shown health benefits in various studies, challenging this negative perception.
  • - There's a growing call for re-evaluating how we categorize dietary carbohydrates to better reflect their structural complexity and positive health impacts.

Effect of sorghum flour-containing pasta on postprandial glycemia, appetite and energy intake in healthy individuals.

Eur J Clin Nutr

Department of Community Health Sciences, College of Applied Medical Sciences, King Saud University, P.O. Box 10219, Riyadh, 11433, Saudi Arabia.

Background/objectives: In vitro studies suggest that incorporating sorghum flour into staple foods including pasta reduces their starch digestibility and hence may suppress postprandial blood glucose levels, appetite and energy intake; however, these effects in humans have yet to be reported. Therefore, this study investigated the effect of red and white sorghum-containing pasta on blood glucose response, appetite and energy intake in humans.

Subjects/methods: In a randomised crossover design, healthy individuals (n = 20) consumed the following three iso-caloric test meals (each providing 50 g available carbohydrates) as breakfast: control pasta (CP) made from100% durum wheat; 30% red sorghum pasta (RSP) and; 30% white sorghum pasta (WSP).

Division of Human Nutrition, Department of Food, Environmental and Nutritional Sciences (DeFENS), Università degli Studi di Milano, 20133, Milan, Italy.

Plant-based diets represent a valid strategy to improve human health and increase food sustainability. The availability of legume-based products, a good source of proteins and fibers, could help consumers to promote healthy dietary patterns. The aim of this study was to examine the impact of different legume-based pastas on energy intake and appetite in healthy volunteers.

The behavioural response of adult maize weevil, , to different types of semolina pasta enriched or not enriched with increasing proportions (5%, 10%, and 15%) of house cricket () powder was investigated in olfactometer arena bioassays by using trap devices. In the five-choice behavioural bioassays, the number of adults attracted to 100% durum wheat semolina pasta was significantly higher than those attracted to the other pasta types enriched with powder. In the two-choice behavioural bioassays, the Response Index for each pasta type was positive and significant.
