In alkaline solution, the electrocatalytic oxygen evolution reaction (OER) of dual transition metal atom (2TM) nitrogen-decorated graphene as a double-atom catalyst (DAC) has received special attention. Here, using density functional theory (DFT) calculations, the OER electrocatalysis of 2TM-pyridine/amino-nitrogen-decorated graphene (2TM-NG and 2TM-NG. 2TM represents FeCo, FeNi, Conti) is studied. The electrocatalytic OER mechanism is that 2TM-NG acts as the pre-catalyst, while the real catalysts are 2TM-NG and 2TM-NG-O. In particular, CoNi-NG and CoNi-NG-O exhibit higher OER activity compared to state-of-the-art RuO at pH = 14. It is confirmed that the potential-determining step is also the rate-determining step. Amino-nitrogen is the main accepter of electrons from CoNi atoms and pyridine-nitrogen is the main acceptor of electrons from nearby C atoms. The role of different N coordination continues to influence the entire electrocatalytic OER process of CoNi-NG. Simultaneously, the overpotential of CoNi-NG is in a volcano-shaped relationship with the electronic properties (oxidation state or d-band center) of the catalytic site of Co. Moreover, CoNi-NG and CoNi-NG-O are the closest to the center of the OER overpotential (a function of the d-band center and oxidation state) contour plot, implying that they exhibit the best catalytic activity among all the CoNi-NG materials. The optimal electronic properties of CoNi-NG and CoNi-NG-O contribute towards their excellent OER performance, and provide a new breakthrough in developing high-performance DACs.

In this study, an integrated approach combining UHPLC-HRMS, H NMR spectroscopy, and sensory analysis unveiled the unique lipid fingerprint of long-ripened Protected Designation of Origin (PDO) Coppa Piacentina. Lipidomic profiling revealed significant alterations in lipid classes, including triacylglycerols, sphingolipids, and their oxidation products, which likely contribute to the distinctive flavor, texture, and nutritional properties of this traditional Italian product. UHPLC-HRMS analysis identified various lipid species, highlighting dynamic changes occurring throughout the 240-day ripening process.

The effects of dairy sterilization techniques (65 °C/30 min, 72 °C/15 s, 85 °C/15 s, 100 °C/5 min, and 121 °C/5 s) on the epigallocatechin-3-gallate-casein (EGCG-CS) complexes were investigated through the structural and functional characteristics in this work. Fourier transform infrared spectroscopy (FT-IR) detection showed the redshirting of the absorption peak suggested structural changes in the amide I area. Field emission scanning electron microscopy (FESEM) and viscosity measurements proved that treatments above 85 °C broke non-covalent bonds, leading to instability and low viscosity of EGCG-CS.
