Three new tyrosol derivatives from Huangjing wine.

Phytochemical investigation on the concentrate of Huangjing wine, resulted in the isolation of three new tyrosol derivatives 4-hydroxyphenethyl 2-(R)-hydroxy-3-phenylpropionate (), 4-hydroxyphenethyl(4-hydroxy-3-methoxyphenyl)propionate () and 4-hydroxyphenethyl ethyl succinate (), together with 5 known compounds, ferulic acid (), L-phenyllactic acid (), hydroxytyrosol (), dihydroferulic acid (), cyclo(L-Pro-D-Tyr) (). Their structures were elucidated using spectroscopic analysis and by comparison with the literature data. All compounds displayed antioxidant effect in the DPPH (2,2-diphenyl-1-picrylhydrazyl) radical. Among them, the new compound exhibited obvious antioxidant effect, and new compounds and exhibited medium antioxidant effect.

In this scientific work, a novel and green method for selective lipophilization of EVOO's bioactive phenolic alcohols (PAs), namely, tyrosol, hydroxytyrosol, and its metabolite homovanillyl alcohol as fatty acid esters, is elucidated. The PAs have been employed as hydrogen bond donors in the formation of natural deep eutectic solvents (NADES) with choline chloride (ChCl). The fast and cheap esterification method by formation of choline chloride-based deep eutectic solvents promotes the derivatization of PAs with various fatty acids as acylating agents in the absence of organic solvents and catalysts.

Olive oil is an indispensable part of the diet in Mediterranean regions, and is appreciated worldwide for its sensory characteristics, combining a fine aroma and pleasant flavor with the high nutritional value of specific chemical compounds.
