The effects of ultrasound (0, 300 and 600 W for 20 min at the frequency of 20 kHz) followed by postmortem aging (0, 4 and 8 d aging time) on beef quality were evaluated. Ultrasound treatment, aging time and their interaction all significantly affected the pH and tenderness of beef (p < 0.05). Furthermore, ultrasound improved the cathepsin B + L activities and the solubility of collagen compared with the control without ultrasound treatment (p < 0.05). In terms of microstructure, the perimysium was ruptured by the ultrasound treatment which caused the collagen fibers to be disorderly and loosely arranged. In addition, ultrasound could affect the structural stability of collagen resulting in a significant reduction of thermal denaturation temperature (p < 0.05). The results showed that ultrasound could improve beef tenderness during postmortem aging by changing collagen structure and regulating the activities of cathepsin B + L.

As an aging population continues to remain active, it is essential for primary care physicians, general orthopaedic surgeons, and spine surgeons alike to understand the nuances of diagnosis and management in the recreational athlete population. This is a unique population due to the increased importance placed on returning to high levels of activity, but, by definition, they enjoy less resources and financial incentive to optimize their rehabilitation and return to sport compared with professional athletes.

Traditional preparation of yttrium aluminum garnet (YAG) transparent ceramics involves several steps, including powder preparation, molding process and sintering at high temperature. Herein, a new and simple method was developed to prepare YAG transparent polycrystalline films directly through a novel interface reaction between sapphire and a Y(OH)(CO)(NO)·HO film attached to the sapphire. The prepared YAG:5%Ce transparent polycrystalline film could be combined with a blue chip to obtain fluorescence-converted white LED, with a CCT of 6361 K and a CRI (Ra) of 73.
