Hot air drying has proven to be an efficient method to preserve specific edible plant materials with medicinal properties. This is a process involving chemical, physical, and biological changes in plant matrices. Understanding these processes will lead to an improvement in the yields of bioactive compounds. This study aims to optimize the drying process of two species' fruits used in folk medicine, and . The optimized extracts' antioxidant capacity was assessed using various assays, with the barberry extract showing very good activity (50.85, 30.98, and 302.45 mg TE/g dw for DPPH, TEAC, and FRAP assays, respectively). Both species exerted good fungal α-glucosidase inhibitory activity (IC = 0.34 and 0.56 mg/mL, respectively) but no activity on mammalian α-glucosidase. Additionally, this study identified and quantified the main bioactive compounds. The results presented herein are a breakthrough in industrializing this drying process. Additional studies are necessary to mechanistically understand the drying process involved in these plant materials.

Blackcurrant press cake (BPC) anthocyanins were recovered using ultrasound-assisted extraction, and the optimal BPC extract was tested for its antioxidant capacity using chemical and biological assays and applied in a functional food model. Extraction at 400 W for 10 min followed by freeze-drying rendered an extract rich in polyphenols (47.83 mg GAE/g), where delphinidin-3-rutinoside, delphinidin-3-glucoside, cyanidin-3-rutinoside, and cyanidin-3-glucoside accounted for 75 % of total phenolics.

Background: The development of acid-soluble soybean protein (ASSP) is a dynamic field with ongoing research aimed at exploring its emulsifying, foaming, and gelling properties. These properties can affect the texture, stability, and sensory attributes of food. Innovations in processing technologies, such as freeze-drying, hydrothermal treatment, and homogenization processing, are being made to enhance the quality of ASSP, which are crucial for its application in food products.

This research aimed to investigate the optimization of lipid-based nanoparticles to improve the utilization of n-3 PUFA source in chicken diets. Three groups of slow-growing Korat chickens were reared under the same conditions and fed a diet containing 6 % rice bran oil (RBO, control group), 3 % tuna oil (3 % TO) and 3 % tuna oil in targeted lipid-based nanoparticles (3 % TO-TNP). The growth performance, carcass composition, meat quality, fatty acid profile of breast and thigh meat, hematological and plasma biochemical parameters were evaluated.

The World Health Organization (WHO) has recently declared another global health emergency due to the rapidly spreading monkeypox (Mpox) outbreak in numerous African countries. To address the unmet need to contain the outbreak using the existing vaccines, this study developed a lyophilization process for an effective, scalable and affordable Mpox mRNA-LNP vaccine candidate to address the global health crisis. A comprehensive evaluation and optimization of the vaccine formulation (the type/concentration of cryoprotectants, the type/concentration of buffer system, as well as the mRNA concentration and reconstitution solvent) and the freeze-drying process parameters (freezing method, temperature, cooling rate and primary/secondary drying conditions) were conducted.
