Polycystic ovary syndrome (PCOS) increases type 2 diabetes and non-alcoholic fatty liver disease (NAFLD) with insulin resistance. We hypothesized that a 35 g whey preload would improve insulin sensitivity and glucose handling while reducing biomarkers associated with NAFLD. Twenty-nine age-matched women (CON = 15, PCOS = 14) completed oral glycemic tolerance tests following baseline (Day 0) as well as an acute (Day 1) and short-term whey supplementation (Day 7). Whey had an interaction effect on glucose ( = 0.02) and insulin ( = 0.03), with glucose remaining stable and insulin increasing with whey supplementation. Insulin sensitivity ( < 0.01) improved with whey associated with increased glucagon secretion ( < 0.01). Alanine aminotransferase (ALT), and aspartate aminotransferase (AST) remained unchanged, but "day" had an effect on the AST:ALT ratio ( = 0.04), whereas triglycerides and sex hormone binding globulin overall were greater in the PCOS group ( < 0.05). Total cholesterol decreased in PCOS (by 13%) and CON (by 8%) (NS). HepG2 cells treated with plasma from participants before and after whey decreased lipid accumulation in the PCOS group after whey ( < 0.05). Whey provided an insulinogenic and glycemic homeostatic effect in women with PCOS with the potential to combat NAFLD-consequences.

Effect of different evening primrose oil content (1-20 %) on the rheological, mechanical, textural and microstructure of furcellaran/whey protein isolate emulsion gels were investigated at neutral, unmodified pH environment. The results indicate that, irrespective of the concentration, the oil acted as an inactive filler and was not chemically bound in the polymer network but only physically immobilized in it. The increasing oil amount in the material from 1 to 20 % resulted in a percentage decrease in hardness (52 %), gumminess (71 %) and stress relaxation ratio (17 %) which means that presence of the hydrophobic components weakens the structure of the material, but all samples exhibit elastic behaviour.

Unlabelled: Bioprospecting can uncover new yeast strains and species with interesting ecological characteristics and valuable biotechnological traits, such as the capacity to convert different carbon sources from industrial side and waste streams into bioproducts. In this study, we conducted untargeted yeast bioprospecting in tropical West Africa, collecting 1,996 isolates and determining their growth in 70 different environments. While the collection contains numerous isolates with the potential to assimilate several cost-effective and sustainable carbon and nitrogen sources, we focused on characterizing the 203 strains capable of growing on lactose, the main carbon source in the abundant side stream cheese whey from dairy industries.
