Adulteration of cow's milk with buffalo's milk detected by an on-site carbon nanoparticles-based lateral flow immunoassay.

A competitive lateral flow immunoassay using amorphous carbon nanoparticles (CNPs) and non-immunoglobulin antigen has been developed for the rapid detection of adulteration of cow's milk with buffalo's milk. Purified polyclonal antibodies against a specific buffalo's milk protein fraction were conjugated to CNPs and sprayed on a conjugate pad. The test line consisted of buffalo's skimmed milk proteins (1.6 μg/cm), while the control line contained anti-rabbit antibodies raised in goat (0.5 μg/cm). In the test procedure milk sample is mixed with 100 mM borate buffer (pH 8.8 containing 1% BSA and 0.05% Tween 20) and pipetted onto the sample-cum-conjugate pad. A black/grey test line can be observed if the sample is free from buffalo's milk. The sensitivity of the test i.e. no visible test line is 5% adulteration of cow's milk with buffalo's milk. The test has applicability at the milk receiving stations and can be applied to heated milk samples.

Herein, the volatile compounds of 2 kinds of Mozzarella cheese were qualitatively and quantitatively analyzed by SPME-GC × GC-O-TOFMS, SPME-Arrow-GC-MS and GC-IMS for the first time. The increased use of dairy fat in various applications is facilitated by its fractionation into hard and liquid fractions. Herein, the fractionation of bovine ghee and buffalo ghee was investigated, and triacylglycerol (TAG) profiles of milk fat fractions and 2 categories of infant formulas fat were quantified by using ultra-performance convergence chromatography quadrupole time-of-flight mass spectrometry (UPC-Q-TOF-MS) using carbon dioxide as the mobile phase. Our research on the expression and characterization of exosomal miRNAs in buffalo milk, particularly in the context of healthy, sub-clinical mastitis and pasteurized milk, is a novel contribution to the field. We are the first to investigate the expressions of miRNAs and the characterization of exosomes in boiled and pasteurized milk. This study is based on clinical signs and CMT, where twenty buffalo milk samples were divided into normal and sub-clinical mastitis and a third group of ten commercial pasteurized milk.

This study aimed to investigate the changes in the bioactive peptides (BPs) of buffalo milk cheese (BMC) within 15 days of storage. A total of 3605 peptides were identified in the BMC, with 260 peptides remaining stable for 15 days. Among these, the peak intensities of all reported BPs (9 peptides) increased on the 15th day.

This study involved a diversity analysis and traceability of the microbial communities in raw buffalo milk from three buffalo farms at different management ranks in Guangxi Province, China.
