From July 2017 to Jan 2019, a total of 572 retail fresh vegetables were collected to clarify the contamination of Salmonella in the Mekong Delta, Vietnam. Salmonella was isolated from 74 (12.9%) of 572 samples. The isolation rate of Salmonella from retail fresh vegetables in the rainy season (15.3%) was significantly higher than that in the dry season (7.6%) (P < 0.05). Of 74 Salmonella isolates, Salmonella Weltevreden was the most predominant serovar (35.1%) identified from retail fresh vegetables in all of the wet markets. All S. Weltevreden isolates (100%) were susceptible to nine antibiotics examined. Thus, retail fresh vegetables were considered as an important potential vehicle of Salmonella transmission to humans in the Mekong Delta. These results provide important data for preventing and controlling human salmonellosis in this area.

Background: Ozone (O) is a promising alternative antibacterial agent that has recently been used in meat processing. The understanding of the appropriate functional settings of O for addressing food safety problems is still insufficient.

Aim: The aim of this study was, therefore, to investigate the effects of exposure to O on the bacteriological quality of retail meat inoculated with at refrigeration temperatures.

This study investigates quality changes occurred in sliced pork belly with different fat content during refrigerated storage, and the potential of spectral imaging technology in predicting quality properties. Pork bellies with different fat levels (low 'LF', medium 'MF' and high 'HF') were selected from slaughtering houses and directly transferred to the laboratory. The sliced bellies were packed in modified atmosphere packages with high oxygen levels (80 %) and the essential visual and olfactory characteristics, microbiological load, pH, lipid oxidation and colour values were assessed throughout 20 days of refrigerated storage.

ST8-t008-SCC IV methicillin-resistant in retail fresh cheese.

JDS Commun

November 2024

Facultad de Microbiología, Universidad de Costa Rica, San Pedro de Montes de Oca, 11501-2060 San José, Costa Rica.

This study reports the finding of 3 ST8-t008-SCC IVa (2B) methicillin-resistant (MRSA) strains in fresh cheese purchased within a single market in Costa Rica. In line with the finding of the resistance genes , , (C), and (A) in their genomes, these bacteria showed phenotypic resistance to multiple β-lactams and erythromycin. In addition, they carry genes for acquired resistance to aminoglycosides () and fosfomycin (), and genes for a myriad of virulence factors, including adhesins, hemolysins, and exotoxins.

Article Synopsis
  • Cronobacter species are opportunistic pathogens found in various foods, making their isolation from seafood, like fish and shellfish, challenging due to their coexistence with similar bacteria in aquatic environments.
  • This study analyzed 75 seafood samples from retail markets, revealing a 32% incidence rate of Cronobacter, with dried fish showing the highest prevalence (48%).
  • The best method for isolating Cronobacter spp. involved using specific enrichment broths and isolation media, emphasizing dried fish's role as a significant reservoir for the pathogen, particularly C. sakazakii.

Despite the widespread consumption of salmon products, an all-round microbiological survey on fresh salmon and smoked salmon products sold on the market directly to consumers remains to be undertaken. The present study conducted a comprehensive microbial investigation employing both conventional cultivation-based techniques and 16S rRNA amplicon sequencing. A total of 120 fresh salmon and 95 smoked salmon products were systematically collected across all four seasons (spring, summer, fall, and winter), accompanied by temperature assessments of each product's interior.
