Arsenic can occur in foods as inorganic and organic forms. Inorganic arsenic is more toxic than most water-soluble organic arsenic compounds such as arsenobetaine, which is presumed to be harmless for humans. Within the first German total diet study, total arsenic, inorganic arsenic, arsenobetaine, dimethylarsinic acid and monomethylarsonic acid were analyzed in various foods. Highest levels of total arsenic were found in fish, fish products and seafood (mean: 1.43 mg kg; n = 39; min-max: 0.01-6.15 mg kg), with arsenobetaine confirmed as the predominant arsenic species (1.233 mg kg; n = 39; min-max: 0.01-6.23 mg kg). In contrast, inorganic arsenic was determined as prevalent arsenic species in terrestrial foods (0.02 mg kg; n = 38; min-max: 0-0.11 mg kg). However, the toxicity of arsenic species varies and measurements are necessary to gain information about the composition and changes of arsenic species in foods due to household processing of foods.

This study aims to utilize secondary aluminum dross waste to synthesize Fe-Al layered double hydroxide (Fe-Al LDH) for efficient adsorption of arsenic from drinking water. The synthesis process was based on a multi-step hydrometallurgical approach, in which the aluminum content in the waste was first converted to sodium aluminate. This was followed by the transformation into Fe-Al LDH through a series of processes, including gelation, sol formation, simultaneous precipitation, and aging.

Arsenic is a pervasive environmental pollutant that can bioaccumulate in Antarctic krill through the food chain, posing potential risks to human health. This study investigates the toxic effects of arsenic in Antarctic krill oil (AKO) on Caco-2 cells, focusing on oxidative stress and apoptosis induction. AKO is nutrient-rich and contains various arsenic species, including arsenite (As³⁺), arsenate (As⁵⁺), dimethyl arsinic acid (DMA), and arsenobetaine (AsB), each exhibiting different toxic potencies.

Selenium nanoparticles are well known for their antioxidant and stress-mitigating properties. In our study, composite nanoformulations of selenium and chitosan have been synthesized. Arsenic contamination of water endangers the health of millions of people worldwide, affecting certain countries and regions with especial severity. Interest in the use of Fe-based metal organic frameworks (MOFs) to remove inorganic arsenic species has increased due to their stability and adsorptive properties. In this study, the performance of a synthesized Nano-{Fe-BTC} MOF, containing iron oxide octahedral chains connected by trimesic acid linkers, in adsorbing As(III) and As(V) species was investigated and compared with commercial BasoliteF300 MOF.
